Along with the rapid development of society and economy, international and regionaleconomic exchanges are becoming increasingly frequent. The trade and economy inGuangdong Province, the forefront of opening up and reform, has also ushered in an era ofthriving development. Meanwhile, the invasion of international well-known brand hotelshelps to boost the fast growth of local high-class business hotel. Nevertheless, the design levelof hospitality industry in China, being a late starter, still falls behind of that of internationalwell-known brand hotels. Therefore, how to improve the construction level and designstandard of high-class business hotel becomes a research topic deserving to be analysed.The dissertation is focused on the space of catering, banquet of high-class business hotelsin Guangdong Province. The design and operation of it, which constitutes an important part ofhotels’ public area, will exert great influence on the hotel as a whole. Therefore, it isnecessary to conduct a research on the theories and examples of its design in an attempt toform a systematic design standard and guide the way of designing a hotel. This dissertation isdivided into seven chapters:The first two chapters give explanation of research background and object of the studyfirstly. And then a brief summary of the space of catering, banquet of the hotels is presented.The two chapters also conducts researches on the theory of customer demand and design ofcatering service process. Last but not least, the functional relationships between every part ofhotel architecture are studied.In the third chapter, design standard of hotel architecture, especially the space of catering,banquet of high-class business hotel is analysed. The analysis of functional constituents andstreamlines of the space of catering, banquet of high-class business hotel is also given. At last,the author focuses on the scale choice and area proportion of the space of the catering,banquet of high-class business hotels.The following three chapters are the core of the dissertation, which includes concreteanalysis of the setting areas, transportation streamline, functional components, area and scale,design style and detailed design of the main parts of the space of catering, banquet ofhigh-class business hotels. The last chapter presents explicit understanding of the design theory of the space ofcatering, banquet of hotels from the practical perspective combined with the projects of mysupervisor and examples of outstanding hotels collected by the author so as to providereference for the theoretical study and design standard of the space of of catering, banquet ofhotels.
