The safety and innocuity nature pigment has the nutrition and pharmacody function. It has been widely used in many applications, such as in foods, medicine and cosmetics etc.. Anthocyanin widely consists in the blossom and fruits of various vegetables. And the anthocyanin pigment extracted from them is the natural pigements which has been allowed to use by WTO. Because of its good color, pure flavor, and some important pharmacody function of refreshing eyes and minds, attention has been centered on it in recently. And the demand of it exceeded its supply. At present, the extraction of the anthocyanin pigment is limited by the natural resource, so the suitable natural vegetable resources should be exploited immediately.In this paper we tried to extract high quality anthocyanin pigment from the Menispermum dauricum , which is abundant in zones of Mountains Changbai. The extract condition, enrichment of the anthocyanin, and the process arts of the final production are analyzed in detail. The optimized extract condition is put forward, and the Menispermum dauricum red pigment was extracted. It is provident by the experiment that there is abundant anthocyanin in the Menispermum dauricum. Its content is between Lonicera caerulea and Vaccinium, so the Menispermum dauricum is the best extraction resource of the anthocyanin pigment. And it is provident that the light, temperature, metalion and value of all have some influence on the stability of such three pigments. With the extracted menispeermum dauricum red pigment, influences of the solvency, light, temperature and the metal ion on the stability of thepigment is researched. And compared that with the Vacciniumand and Lonicera caerulea. It is shown that the characters of the three pigments are nearly identitcal. The performance of the menispeermum dauricum red pigment is as good as the market Vaccinium and Lonicera caerulea red pigment.The experiment shown that Fe2", Fe3+ Cu2+ have an great destruction on the pigment, but Sn2+ can enhance it. This result provides a scientific basis for the preparation, preservation, application of the menispeermum dauricum red pigment. The poisonous experiment prove that the menispeermum dauricum red pigment is innocuity. It is some bitter, but can be suppressed by cane sugar. So the menispeermum dauricum red pigment can be completely used as natural pigment. In our future research, we will lay emphasis on how to improve the content of anthocyanin and how to improve its taste.
