Beet red color is a kind of water soluble color which extracted from the root of Bata.vulgaris.L.Var.rubra. It's not only safe and non-toxic, but also rich in anthocyanin (betanin), beet yellow and microelements, it is good to the prevention of coronary heart disease and arteriosclerosis. The color of beet red color is gorgeous, and its coloring ability is better than other betanins. Different kind of root beet can produce beet red color with different color tones, its color can be red to dark purple, and this characteristic meets the needs of different customers.The main ingredients of beet red color is betanin, its chemical formula is C24H26N2O13. It also contains betacyanin, former betanin, betaxanthinsâ… , betaxanthinsâ…ˇand so on. It can be soluble in water, juice, 30% ethanol,50% ethanol, insoluble in acetic acid, Propylene glycol, not soluble in organic solvent, such as anhydrous ethanol, glycerol, acetone, chloroform, olein, ether etc.The experiment using the process which is suitable for large-scale production in order to achieve the best preparation cost. Researching the extract, refine, concentration and stability of beet red color to meet the needs of the customers in development countries. Now more and more people pay more attention to the food safety, it becomes a kind of trend that natural color to replace toxic and side effect synthetic color has already. Beet red color is not sensetive to PH value,have no odor and have a wider range of application, it can strengthen the product function, make the colors more vivid, improve the product quality when it adds to foods, health products, medicine,cosmetics, fine chemical products.
