Experimental data show that water chestnut polysaccharide can significantly increase the immune dysfunction induced by cyclophosphamide in mice AOC, T-SOD and GSH levels, and can significantly reduce the immunocompromised mice, MDA content, and to the above indicators to reach normal levels.In addition, the paper also for the safety of water chestnut polysaccharide was related to evaluation of acute toxicity and subacute toxicity experiments showed that the dose of the water chestnut polysaccharide in mice organs, so there was no significant effect on body weight, all the mice were normal physiological, mental status, feeding the living conditions of normal water intake, no poisoning or death phenomenon.Meanwhile, this paper tests and accelerated by the impact factor test examines the stability of polysaccharide water chestnut, water chestnut polysaccharide to the character, clarity, pH, and polysaccharide content as an indicator, showed that light on the water chestnut polysaccharide slight effect, will test the polysaccharide content decreased, therefore, should be brown bottle filling agents, from light, these measures can be effective to some extent, to avoid the light of the impact test, improve the stability of water chestnut polysaccharide; In addition, the temperature stability of the water chestnut polysaccharide had no significant effect can not be considered.
