Polygonatum is a kind of homologous herb of medicine and food.Its role in delaying aging,improving memory and improving human immunity has been confirmed by modern medicine.With the gradual deepening of pharmacology and clinical research of Polygonatum,the application of Polygonatum and its extracts as raw materials in the field of health functional foods has become a main hotspot of food research.Oral preparations are common types in health care products,and have the advantages of small dosage,rapid absorption,portability,convenient use,and easy storage,and are suitable for industrial production.In order to increase the added value of Polygonatum and expand the types of deep-processed products,this study extracted the active ingredients from Polygonatum and made them into oral liquid products,and identified their quality and efficacy.The main results are as follows:1.Determination of process conditions of extract of Polygonatum.The optimal extraction conditions were selected by single factor test and Box-Benhnken method: ultrasonic temperature 46 ?,ultrasonic power 250 W,ultrasonic time 30 min,solid-liquid ratio 1:9,and the Polygonatum obtained under these conditions.The yield of the extract of Polygonatum chinense was 11.87%.2.Determination of the best clarifying agent for Polygonatum oral liquid.By comparing the effects of ZTC1+1 II clarifier,chitosan,chitosan hydrochloride and diatomaceous earth on the extract of Polygonatum odoratum,the results showed that the polysaccharide retention rate was up to 93.51% when chitosan was 0.75%,and the light transmittance is 94.89%,and the effect is optimal.3.Determination of the formulation of Polygonatum oral liquid product.The best formula was selected by single factor and orthogonal test,the optimum formula was selected as follows: the amount of extract of Polygonatum was 60%,the amount of honey added was 4%,the amount of citric acid was 0.2%,and the amount of stevioside was 0.05%.In the experiment,the sterilization conditions of the oral liquid were investigated.According to the results of microbial indicators and polysaccharide content after sterilization,the safety and the quality of the oral liquid were comprehensively considered.The sterilization temperature was 100 ? and the sterilization time was 10 min.4.Determination of antioxidant properties of Polygonatum oral liquid products in Vitro.The antioxidative activity of Polygonatum oral liquid was studied by comparing the ability of Polygonatum oral liquid and two commercially available oral liquids to scavenge DPPH free radicals,scavenging hydroxyl radicals and reducing ability.DPPH free radical scavenging ability was as follows: Polygonatum oral liquid> Commercial oral liquid B> Commercial oral liquid A;Hydroxyl radical scavenging ability was as follows: Commercial oral liquid B> Commercial oral liquid A> Polygonatum oral liquid;Total reducing power: greater than Within 6 times dilution,the reducing capacity of the three was as follows: Polygonatum oral liquid> Commercial oral liquid B> Commercial oral liquid A;when the concentration is less than 6 times diluted,the reducing power of the three was as follows: Polygonatum oral liquid> Commercial oral liquid A > Commercial oral liquid B.5.Determination of the effect of Polygonatum oral liquid on postprandial blood glucose concentration.The experimental results showed that in the blood glucose response experiments of the control group and the experimental group,the peak time of the blood glucose reaction curve was the same in the experimental group and the control group,but the peak value of the experimental group was significantly lower than that of the control group.The IAUC value of the experimental group was lower than that of the control group,indicating that the blood glucose concentration fluctuation caused by the experimental group was small,and the Polygonatum oral liquid played a certain stabilizing effect on the postprandial blood glucose concentration change.
