The cold chain is defined as materials properties, in order to maintain its quality and used in the process from production to consumption is always at the low temperature state of logistics network. Logistics network is the process of interrelated logistics organization, facilities, and a collection of information.The most effective way to cold-chain transport, which is equipped with the appropriate cold-chain technology and equipment, establish and improve the cold chain in order to achieve to maintain the original quality and flavor. Although there is a considerable portion of the business community of the importance of and are building their own cold chain, but a good cold-chain logistics system has not yet formed, more of a local cold-chain logistics. Some segments of the supply chain are mainly the result of a large number of cold-chain operations areas and inefficient. As a matter of fact. China's real cold chain has not been established , lack of professional equipment, skills, talent for the cold chain transport is not enough emphasis, have become the development of cold chain system, which must be addressed.This paper analyzes Beijing vegetable processing company status and problems of the cold chain transport process, based on the background of Beijing logistics enormous amount of vegetables, but inadequate cold-chain logistics development, the lack of a complete cold-chain system. Refer to the significance of Beijing Olympics vegetables cold-chain transport processes. Using Six Sigma methodology DMAIC model for process optimization of cold-chain transport, and come up with recommendations for improvement.
