Nanchang, located in north central of Jiangxi province and at the lower reaches of the Gan River and the Fu River, is on the southwestern shore of Poyang Lake, China's Largest fresh-water lake. Nanchang has smooth topography and rich water resources. Total area of whole Nanchang is 7400 km~2, including 2146.04 km~2 river system area, which accounts for 29.7% of the total area. Nanchang governs 5 districts and 4 counties: Xihu district, Donghu district, Qinshanhu district, Wanli district, Nanchang country, Xinjian country, Anyi country and Jinxian country. As the water source type and landform have differences respectively, the aquaculture development situations are various between each districts and counties.This research paper made an investigation on the current situation of Nanchang's fishery, including the scale and output cf the aquiculture, the specialty of aquiculture, the diversity of aquiculture pattern and so on. According to the investigation, conclusions are made that Nanchang's fishery has developed quickly in last few years. In 2005 the general weight of aquatic products reached 28.4 tons, including 6.5 tons of special aquatic products, which were twice as many as the statistics in 1995. It has become one of the most important and vigorous industries in the city's agricultural economy development. However some problems have still existed, such as the irrational structure of aquiculture, the polluted surroundings, the exhaustion of natural resources and so on. The most serious problem seems the quality of aquatic product, which directly related with people's health and the development of fishery economy.This research paper analyzed 5 aquafarms' 10 aquatic products, and test items included the heavy metal,terramycin,malachite,furan,sulfanilamide and so on. According to the results, conclusions can be made that most of the aquatic products are tally with the standard of China, Namely Hg≤1.0 mg/kg,As≤0.50mg/kg,Pb≤0.5 mg/kg,Cd≤0.1 mg/kg and so forth. But there are also some problems. The content of Cd in Pengze crucian carp produced by some farm is 0.15mg/kg, which is much higher than the national standard.This paper analyzed the application of HACCP in the Chinese mitten-handed crab cultivation of Junshan Lake and non-pollution aquafarms of Maolian Lake, including control points of aquafarms' design and constructions, water quality, fries' supply and training, food supply, preventions of diseases, raising management and so on. During the cultivation of Chinese mitten-handed crab in Junshan Lake, we found that the operation and data of every control point can abide by correlative standards, so that the detection of Chinese mitten-handed crab in Junshan Lake can abide by national standards. But in the cultivation of grass carp in Maolian Lake, some control-points (including water quality, animal feeds, substrate sludge and so on) had higher Cd content which lead that the Cd content of the Pengze crucian carp is higher than national standard.According to the results of the two examples, conclusions can be made that the qualities of aquatic products are related with the CCP. No other than strictly comply with the HACCP system and correct the hazards in time, the quality of aquatic products can be assured.
