Goose oil was used as original material, and researched the preparation process of goose oil diglyceride, the best process to produce the goose oil diacylglycerol microcapsules, effects of goose oil diglyceride of antioxidant capacity on rats. Fat rats were researched to lose weight. The results showed that:1. Study on goose oil diglyceride by enzymaticMixed goose oil, fatty acids and glycerol were used as feedstock, generation rate of diglyceride was used as indicator, substrate ratio(fatty acid:glycerol), amount of enzyme, reaction time and temperature were used as factors. The preparation process of goose oil diglyceride was optimized by surface methodology. The results showed that:when the reaction temperature was46℃, reaction time was9.2h, substrate ratio was1.05, enzyme dosage was3.03%, the generation rate of goose oil diglyceride reached92.57%.2. Study on microcapsulation of goose oil diglycerideGoose oil diacylglycerol was used as material and embedding rate was used as indicator,sodium caseinate, β-cyclodextrin was used as wall material; goose diacylglycerol oil was as core material; Carboxyl Methyl Cellulose was used as emulsifier and at last goose oil diacylglycerol microcapsules was produced by freeze-drying. The results showed that:when the wall material:core material was2.4:1, CMC:β-cyclodextrin caseinate was1:1.2, solids was23%, emulsifier was0.7%, the embedding rate of goose oil diacylglycerol microcapsules reached93.7%. The goose oil diacylglycerol from oxidation had been prevented effectively and the shelf life of it was prolong.3. Effects of goose oil diacylglycerol on blood biochemical indexes and antioxidant capacity of ratsThe effects of goose oil diacylglycerol on blood biochemical indexes and antioxidant capacity of SD rats were studied.Rats were divided into seven groups:blank control group,lard group,the wall material group and three different goose oil diacylglycerol groups, VitaminC groups. The related indicators were detected six weeks later. The results showed that:(1) Compared with the blank control groups, the blood biochemical parameters of goose oil diacylglycerol groups had no difference. In serum and liver, the active of T-AOC/SOD/GSH-Px escalated significantly(P<0.05) and the content of MDA lowered significantly(P<0.05). (2) Compared with lard groups, the blood biochemical parameters(AST/ALT) of goose oil diacylglycerol groups lowered clearly(P<0.05). In serum and liver, the active of T-AOC/SOD/GSH-Px escalated significantly or quite significantly(P<0.05or P<0.01) and the content of MDA lowered significantly or quite significantly(P<0.05or P<0.01).(3) Compared with the VitaminC groups, the blood biochemical parameters, the active of T-AOC/SOD/GSH-Px, the content of MDA in serum and the liver of goose oil diacylglycerol groups all had no clearer difference.The result showed that:Goose oil diacylglycerol may improve the antioxidant capacity.4. Study on the effects of goose oil diacylglycerol microcapsule on lose weight in rats The effects of different doses goose oil diacylglycerol microcapsule on lose weight in rats were studied in this test.84SD rats,200-220g.12rats were found as blank control group,others were ate high fat diet in order to have the fat model.After greating successful model, they were divided into six groups by the weighe:blank control groups, fat model groups, high, middle, low dose groups of goose oil diacylglycerol microcapsule, VitaminBT groups and wall material groups, they were weighted weight. The Lee’s/the proportion of body fat/blood fat by measuring and liver were detected and the histopathologic slide of liver was observed. The results showed that:Compared with fat model groups, the Lee’s〠the proportion of body fatã€TG of the goose oil diacylglycerol groups all lowered significantly or quite significantly(P<0.05or P<0.01); in the groups of high and middle dose goose oil diacylglycerol microcapsule, the weightã€TCã€the content of LDL all lowered significantly or quite significantly, the content of HDL escalated significantly or quite significantly(P<0.05or P<0.01). In the groups of goose oil diacylglycerol, the rats had little fat particles in its liver cells, had more and more normal liver cells, the morphology of cells was close to normal.The result showed that:the goose oil diacylglycerol microcapsule had good effects on lose weight in rats.5. Study on the effects of different compound antioxidants in the antioxidant of goose oil diacylglycerolAs a standard by POV, the effects of different compound antioxidants for the antioxidant of goose oil diacylglycerol was studied. The result showed that:When the weight fraction of tea polyphenols〠β-caroteneã€VitaminE was50%/37.5%/12.5%, the POV of the group of compound antioxidants were lower than the groups of single antioxidant and the other compound antioxidants group, this is the best choice for the antioxidant of goose oil diacylglycerol, and when the temperature was20℃,the shelf life of the goose oil diacylglycerol with this compound antioxidants was240days. |
