This thesis firstly introduce advantageous of fresh supermarket chain operation,put forward that it will become the main approach in fresh business. Then we analysiscurrent situation of logistics and supply chain of fresh supermarket chain operation,and get the result that logistics and supply chain is the main bottleneck in restrictingoperation of fresh produce. Then propose optimization approach of fresh logistics andsupply chain on the basis of related logistics and supply chain theories.The main contents of logistics and supply chain optimization are as follows:1. In order to eliminate unwanted mid-tache, we propose corporation andfarm/planting on contract mode in view of fresh supply chain, and suggest that freshenterprise should build up process center;it also discusses connection between freshsupermarket and suppliers. And get the best relationships between supermarket andsuppliers.2. Propose approach of cold chain optimization on the basis of process center anddesign cold chains of three fresh produce.3. After consider many kinds of factors, we analysis how to choose locations offresh supermarket and the proceeding that should be cared of in building period. Wealso discuss stock and storage strategy of process center.4. Propose fresh enterprises should introduce 3PL in order to transport effectively;then we design sound transportation quantity mode on the base of timely supplementand profit maximization, then we give the solution.5. Propose standardize management of human, machine, material, methods andenvironment on the platform of fresh product center bases on Taylor's ideas aboutscience management.6. Propose application of IT technique in fresh supply chain management.
