In 80-90 years of last century, the foreign technology of automatically removing viscera from slaughtered poultry got mature. In the 21st century, with rapid development of poultry industry, the technology of automatically removing viscera from slaughtered poultry improved, and complete equipments had been widely used in poultry processing lines around the world. In our country, the study on the technology of automatically removing viscera from slaughtered poultry is still in the initial stage. It will take a long time and lots of basic research to develop the technology and equipments of automatically removing viscera from slaughtered poultry with independent intellectual property rights and automatic access to industrial equipment and make it used in industry.This thesis studies the structure and trajectory parameters of device for removing viscera from slaughtered poultry, to do fundamental research for developing automatic eviscerator.Through analyzing the manual process of taking organs, the principle of taking visceral was established. The device for removing viscera from slaughtered poultry is composed of moving control block, jigging control block, swing arm, flexible adjustment device, evicerating tool and et.Through experiments of the abdominal contour modeling and data analysis, referring to related patents, the front structure and motion trail of eviscerating tool.were established. and then the applicable device for removing viscera from slaughtered poultry was acquired.By Pro/E Kinematic simulation analysis, it proved the motion and control process of device for removing viscera from slaughtered poultry meet requirements and the process was further clarified.Through designing and contrasting four practical schemes to drive the device for removing viscera from slaughtered poultry, the scheme that the stepper motor controlled by hardware and software drove the device for removing viscera from slaughtered poultry through screw transmission mechanism to complete the operation of evisceratation was selected, and the experiment set of the device for removing viscera from slaughtered poultry was designed.On the basis of understanding the poultry viscera characteristics and establishing evaluation item of Eviscerating results, we carried out poultry eviscerating experiments.The results showed that:in the condition of hanging birds completely Positioned, poultry eviscerating tool's theoretical trajectory, is Closed, formed by the straight line and arc, approximate rectangle. While the parameters of trajectory were 50~60 mm in width,150~180 mm in height, the initial point 71~76 mm before the back positioning plate,150~180 mm above the heart, the device for removing viscera from slaughtered poultry achieved better eviscerating results.
