Animalcule fermentation is the basis of bioengineering as well as modern biology technology and bioengineering industrialization. The control and optimization of fermentation have a direct influence on the yield and quality of fermentation, thus study on it may produce a significant value both in theory and application. Fermentation is a complex system that is characteristic of time varying, non-linearity and multiple inputs and outputs, and related closely to growth and propagation of creature. Due to the complex principle of fermentation, it is difficult to establish model of control and optimization via analyzing mechanism. The technology of artificial intelligence that possesses the advantages of self-study, self-organization and self-adaptation can provide an effective way for modeling of fermentation process.In this paper based on the measurement and control technology and the analysis of the critical parameter, the idea was presented that ethanol concentration is selected as the control parameter in the fermentation process; the model based on the artificial neural network was established, which was used to measure the on-line; and the fuzzy controller wasdesigned to control ethanol concentration.The simulation experiment shows that the soft-sensing model established can measure the ethanol concentration on-line with high accuracy, and the fuzzy controller designed can be used in fermentation.
