Taking the Insect-fermented Tea as raw material, the quantitative determination of general nutrient content and the qualitative determination biological activity material have been researched. Inspecting the optimum extraction condition to enable the extraction to have the best oxidation resistance ability, Using the system solvent extraction carries on the fission, the oxidation resistance activeness good spot and the extraction has been screened.Carriing on the concentration through the macroporous resin resistance oxidation active material, the concentration extraction were obtained. And oxidation resistance ability of the concentration extractionwere evaluated. The resuLts are as follows:(1) The result of the ingredient qualitative quantitative determination is that the Insect-fermented Tea contains the organic acid, the phenol and the flavanone class, strong heart glucoside, steroid body soap glucoside, alkaloid, lactone, coumarin and glucoside class compound and so on. The fat and the crude fiber are higher than the common green tea, but the water oozes, the thick protein, the polyphenols, the coffeine and the amino acid are lower than the common green tea;and does not contain the soluble sugar; The calcium, the copper and the phosphorus are lower than the common green tea, the magnesium and the manganese and the common green tea quite, but the potassium, the iron, the zinc and the chromium are higher than the common green tea. The Insect-fermented Tea including certain function ingredient, has the rich potassium, the iron, the zinc and the chromium, which is one nutritional value new resources food.(2) Considering extraction the time, the extraction temperature, the solvent strength and the material fluid, the fluid to extracts and ethyl alcohol density have the remarkable influence in oxidation resistance ability;The temperature and the extraction time are not remarkable affect.The B3C2A3D2 combination is biggest to the DPPH percentage clearance, namely the material fluid compared to 1:20,60% ethyl alcohol, extraction time 3h, the extractiton temperature 65℃, which extraction condition obtains is best.(3) Using the system solvent extracting Insect-fermented Tea, test specimen was received with extracts correspondingly matchest he solution with different density, using the pyrogallic acid law to determine the ultra oxygen anion free radical system, Fenton responding the law determination hydroxy free radical system, the iodimetric determination hydrogen peroxideseparately.The result showed that three kind of free radical's elimination abilities were different according to the different solvent extraction. The result of scavenging action of hydrogen peroxide is chloroform> ethyl acetate> normal butyl alcohol> water, The result of scavenging action of hydroxy free radical is ethyl ester extraction> chloroform extract> water extraction> normal butyl alcohol extraction. The result of scavenging action of ultra oxygen anion is Ethyl acetate> water> normal butyl alcohol. Above all, Oxidation resistance ability of the extraction of ethyl acetate is higher.(4) The polyphenol in the extraction of ethyl acetate carried on the separation purification,through macroporous resin and the oxidation resistance ability of polyphenol of the extraction in the most superior condition (material fluid compared to 1:20,60% ethyl alcohol, extraction time 3h, extraction temperature 65℃is researched contrast to Vc.the result is that mellow raises the thing,the ethyl acetate to divide raises the thing and the polyphenol concentrate polyphenol content respectively is mellowly:12.8%,26.6%,58.3%.Oxidation resistance ability determination target including scavenging action to free radical, reducing ability determination, oxidation resistance ability determination in fat. The result showed that raises the thing and the polyphenol concentrate mellowly has the very strong elimination hydroxy free radical ability, eliminates ability to be stronger than Vc,stronger elimination ultra oxygen anion and hydrogen peroxide ability,and they have certain reducing ability, and have the very good dosage dependence.They can reduce peroxide value and the acid value in fat,and are inferior to Vc, but regarding prevents the fat oxidation also to be able to play certain function. Polyphenol concentrate's oxidation resistance activeness is strong compared to raises mellowly, the primary cause is the phenol material purity is high, it can be carried on as oxidation resistance medicine development.
