Edible oils are prone to be metamorphic for oxidated, oxidation process can slow down mixed with antioxidants. Widespread use the synthetic antioxidants such as butylated hydroxyltoluene(BHT),butylated hydroxyanisole (BHA) and Gallic acid (PG) have antioxidant activities. However, the synthetic antioxidants have the problem of security. So, the development of effective and safe natural antioxidants becomes one of the main topics in the field of food chemistry. There are many Chinese spices available in China and it has been verified that many spices are full of antioxdative components. Cuminum cyminum L.is served as spices and used for medical purpose,but there haven't reported the research of antioxidant activities of extracts from Cuminum cyminum L. by organic solvent.In GuiZhou province,capsicum is indispensable. So utility value and economic have to be reflected in lucubrate of them.In the present study, the materials are Cuminum cyminum L. from XinJiang and capsicums from nine regions of GuiZhou. The optimum of extracts conditions is confirmed through antioxidant activities of extracts by organic solvent and orthogonal experimental. Peroxide value (POV) is surveyed by GB/T5538-1995. Analysis and identify ingredients of the extracts by GC/MS. In order to offer foundation of theory and examination for development and utilization of spices as Cuminum cyminum L. and capsicum,promote studying natural antioxidants. The results showed as follow:1. Extracts of Cuminum cyminum L. by different organic solvents all have antioxidant activity to lard, the best effective extract solvent is ethanol, the orthogonal test method was used for studying the effect of four factors three levels ( alcohol concentration, solid-liquid ratio, extracting temperature, extracting time ). the optimal condition of antioxidants form Cuminum cyminum L. is: ethanol concentration 50%, solid-liquid ratio1:7, extracting temperature 60℃, extracting time 8 hours,extraction yield of Cuminum cyminum L. is 17.23% by this condition. Antioxidants have dose response relation and effect increase with dose.2. Extracts of capsicum by different organic solvents all have antioxidant activity to lard,the best effective extract solvent is ethyl acetate, the orthogonal test method was used for studying the effect of three factors and three levels ( extracting time, solid-liquid ratio, extracting temperature ). the optimal condition of antioxidants form chiil is: extracting time 8 hours,solid-liquid ratio1:7, extracting temperature 60℃, extraction yield of capsicum is 10.40% by this condition. Antioxidants have dose response relation and effect increase with dose. The antioxidant activities have difference within nine regions capsicum of GuiZhou province,the relative strengths and weaknesses is:PingBa (AnShun) >HuaXi (GuiYang) >YangMei (LiuPanshui) >DaFang (BiJie) >MaWei (DuYun) >ZunYi (ZunYi) >SiNan (TongRen) >MaJiang (KaiLi) >XingYi(XingYi).3. Through identified, there are phenols,organic acid,alkaloid,amino acid,polypeptide or protein,polysaccharide,saponin,flavone,lactone,phytosterin,triterpene and oil,but anthraquinone doesn't exist in the extracts of cuminum cyminum L. The contents of reducing sugar is 0.318%,extracts ithave reducing power and be capable of catching H2O2. phenols in the extracts,The contents of the phenols is 33.89μg/g.4. Twenty five ingredients have been detected from extracts of cuminum cyminum L. by GC-MS. To identify ingredients and there percentage, the main ingredients are 6Z-2,5,5,10- Tetramethyl-undeca- ,6,9-trien-8-one(24.59%); 6-Octadecenoic acid, (Z)-(21.54%);9,12- Octadeca-dienoic acid (Z,Z)-(15.89%);Benzaldehyde, 4-(1-methylethyl) -(11.51%);4-(1-methylethyl)-(5.97%)and so on.5. There are phenols,organic acid,alkaloid,amino acid,polypeptide or protein,polysaccharide,flavone,lactone,phytosterin,triterpene,anthocyanin,anthraquinone and oil,but saponin doesn't exist in the extracts of capsicum.There are reducing sugar and phenols in the extracts,and ithave reducing power and be capable of catching H2O2 to be about equal to the ingredients of the extracts leached by aether.6. volatilization ingredients of the extracts from DaFang capsicum were analyzed by GC-MS,sixteen chromatographic peaks were separated from diagram of total ion current. It is about equal to the sample of volatilization ingredients of the extracts by aether from GuiZhou nine regions capsicum.
