The chemical-physical properties of the natural fermented and the fresh camel milk collected from the cowhand in Qitai of Xinjiang were analysied, the main results were as follows:There were no significant deviation on the specific gravity and total solids between fresh and fermented camel milk.The specific gravity were 1.0356 and 1.0344 respectively, the total solids were 14.07%,14.17% respectively.But the acidity and pH were distinguished difference, acidity were 36.4°T and 147.6°T ,pH were 6.55 and 4.45.The average content of gross composition were very difficult, ash, gross suger,reductive suger ,total nitrogen and fat were 0.66% and 0.92%,66.96mg/g and 21.99mg/g,54.83mg/g and 16.96mg/g,3.98% and 4.45%, 4.83% and 5.84%, respectively.This study also analysised the compositon of amino acids and fatty acids.The content of amino acids was 4.05%,it contained all kinds of amino acids in which 8 kinds of necessary amino acids of human taked 1.83%.The content of histidine and arginine which were necessary for enfant growth, was 0.17% and 0.16%.Also, contained many kinds of pharmic animo acids which taked up 63.95% of total animo acids,and the contents of aspartic acid was 25.53%,The content of glutamic acid was highest, 1.01%. The proportion of isoleucine, leucine, lysine, threonine and valine to camel milk of Xinjiang were higher than those of God's image, egg, cow milk,albumen of egg and camel milk of Alxa Bactrian.The proportion of saturated fatty acids to unsaturated was 1.93:1,content of saturated fatty acids which mainly contained hexadecanoic acid, tretradecanoic acid and octadecanoic acid was 66.85% of total fatty acids.The content of unsaturated fatty acids which contained oleic 25.28%,palmitoleic 6.50%, and myristoleic 0.39%, was 33.15% of total fatty acids.Linoleic 1.98%, which was poly-unsaturated fatty acids. Finally, the author have done the fringe research on the effects of camel milk powder on the immune activity of mice. The results showed that: fermented and fresh camel milk can strengthen the immunity function of Immundepressed mice.(1) can improve the index of thymus and spleen,the spleen and thymus of Immundepressed mice's were protected by those,and can repare the immune organs that had been destruced by cyclophosphamide. Thymus index of high-dose camel milk group was 2 times to that of Immundepressed group, was 2.7 times to that of low-dose group.The spleen index of low-dose camel milk group was 60.06 and that of Immundepressed group was 30.97, increased by nearly doubled.(2)can increase the masculine ratio of T lymphocytes of Immundepressed mice and the WBC which enhance the body's immunity. WBC of high-dose camel milk group was less than the normal 0.9×10~9, was 1.9 times to that of the Immundepressed group.The masculine ratio of T lymphocytes increased from 34.52% of Immundepressed group to 55.32% of high-dose camel milk group.(3) can enhance the ratio of macrophage's phagocytosis, and as the dose increases, enhance the immunity, phagocytic index increased from 0.28 of lower group to 0.63 of high-dose group of camel milk, phagocytosis rate increased from 20.4% of the Immundepressed group to 35.4 %.
