The food processing fuction and T2DM alleviation of ASK gum, a special gum extracted from the ASK seed, were discussed. This research is important for the exploitation of the unique local plant Artemis sphaerocephala Krasch(ASK) which is abundant in western China. In order to understand the ASK processing fuction, the monosuger compositon, rheological propeitis and water holding capacities and water absorbing capacities were assessed. The Sprague-Dawleys rat models with T2DM were used to study the effect of different dosage of ASK gum on the hyperglycemia, hyperlipemia, liver glycometabolism, insulin sensitivity and resistance, and liver antioxidance of T2DM rat through the measurement of various T2DM-specific biochemical indicators with comparison to healthy rats, T2DM rats, and T2DM rats with Metformin treatment. And HE pictures were used to observe the T2DM complications of organs including liver, kidney, spleen and pancreas.The results suggested that ASK gum not only have potencial application on food proccesion but also have remarkable therapical effects on T2DM. Thus ASK gum could be developed to a popular food addictive with fantastic T2DM therapical function in near future.The main results are as follows:⒈The polysaccharides of ASK gum are composed of 6 monosugars including Glucose, Galactose, Mannose, Xylose, Arabinose and Rhamnose in a descending content order. Though the foamy capacity of ASK powder is inferior, the water absorption capacity, water holding capacity and viscosity capacity of ASK powder are significantly higher than those of flaxseed powder. The viscosity stability under different concentration, pH value and temperature is better than that of flaxseed powder. Thus, compared with flaxseed powder, the ASK powder is more suitable for food processing.⒉The ASK gum can significantly lower fast blood glucose and plasma GSP of SD rats with T2DM and significantly improve the rodent liver HK activity .And the indicators including plasma TG, plasma TC, plasma HDP-C suggested that ASK gum, even with low dosage, can improve the lipid metabolism of T2DM rats obviously.⒊The Oral Glucose Torlerance Text (OGTT) and Insulin Senstivity Index (ISI) were used to assess the condition of insulin resistance of T2DM rats.And the Freed Fat Acid (FFA) level which is extremely correlated with insulin resistance condition was investigated in this research.The animals feed with different dosage of ASK gum demonstrated a significant high ISI value and a significant low FFA level compared with model control group. Thus the ASK gum has a good function in terms of the alleviation to T2DM insulin resistance.⒋In order to find out the antioxidant effects of ASK gum on T2DM rats, the antioxidant indicators such as MDA, SOD, and OH·freed radical at amimal liver and plasma respectively were examined.Compared with model control animals, the rats which took in different dosage of ASK gum had obvious MDA and SOD decline, and markeble SOD activity increase, which indicated a better antioxidant situation of gum-taken animals.⒌Futhermore, the organ pathological condition of T2DM rats were investigated with the employment of HE dyeing technology. The results indicated that ASK gum can obviously prevent the deterioration of T2DM rats organ,such as kidney, liver and spleen.
