Thiosulfinate is the main bioactivator of garlic. The studied results showed: Thiosulfinate was the key compound which was the reason that the garlic had a series of healthy effects, such as lowering-lipids, anti-tumor and anti-virus. Based on the techniques of modern biochemistry, the protective solution of alliinase was prepared. In order to greatestly retain the content of thiosulfinate in garlic powder to the most degree, the garlic powder producing technology was optimized through single-factor and orthogonal experimentats. According to their characters, garlic, vitamin C and vitamin E were used to develop a kind of capsule. For investigating the lipid-lowering effects of the prepared capsule powder and garlic powder, the experimental hyperlipidemia model of SD rats was established. Hyperlipidemic rats received different doses of capsule powder or garlic powder for 40 days. serum TC, TG, LDL-C and HDL-C were analyzed.The conclusions of the study are as following:1 During the optimizing, the protective solution of alliinase was prepared to soak garlic slices which were 4mm thick, and the solution pH value was 6.5. The temperature of hot air drying was 50℃. The remaining rate of thiosulfinate in garlic powder could be over 80%, and was 10% high than pre-optimization.2 The original formular of the garlic powder-vitamin capsule was: garlic powder was 60%, vitamin C 8%, vitamin E 8% andβ-CD 24%.3 The results of original lowering-lipids effects on capsule powder and garlic powder showed:①The high dose of capsule powder(200mg/kg) or garlic powder(120mg/kg) could significantly decrease serum TC level. The lowering extents was 14.1% or 13.2%, and there were significant differences between the high dose and the low in the same powder(p<0.05).②The high dose of capsule powder(200mg/kg) could significantly raise serum HDL-C level(p<0.05). And the raising extent was 8.9%.③A certain dose of capsule powder(≥100mg/kg) or garlic powder (≥60mg/kg)could significantly decrease serum LDL-C level(p<0.05). The lowering extent in high dose was 45.1% or 41.7%, and in low dose was 31.6% or 29.4%. There were significant differences between the high dose and the low in the same powder(p<0.05). ④Neither capsule powder nor garlic powder found significant effect on serum TG.The garlic powder-vitamin capsule had a certain adjunctive effects on lipids-lowering, and its action was better than garlic powder.
