Research Background: With the development of economy and the exaltation of the life level, the supermarkets were favored by the consumers, and became the main way of the citizenry buying the food gradually. Now, the food supermarkets have accounted to 1987 in Jinan city. Accompanying with the development and popularization of the supermarket, its food health problems increase gradually, and the litigating rate of the food health problem increases year by year. Supermarket was so concerned by the social public because there was the potential danger of the important public health affairs in the supermarket. Therefore, it is necessary to carry on evaluation research to the food health condition of supermarket, and to quest for the fitting surveillance management model for the health surveillance department, and to make use of health resource reasonably, and to provide the basis for strengthening the health surveillance work of supermarket.Objective:1) To know the status of food health in Jinan's supermarkets;2) To analyze the reason for the food health problem of supermarket;3) To put forward the suggestion for improving supermarkets' management about food health;4) To provide advice for the surveillance and management of supermarket for health surveillance department.Method: The 100 food supermarkets were sampling at random, and the number of large, medium and small scale was respectively 30,30 and 40, and the supermarkets' staffs were interviewed by questionnaire about health knowledge. The datum was analyzed by SPSS13.0 software.Results:1) The supermarkets still existed shortage in the facilities of construction and health management currently in Jinan, especially in the lager-medium scale of supermarkets, for example, there were some problems on the facilities of construction and non-reasonable craft process etc. in the spot of food processed and in the process of establishing the Chinese fast food;2) On the health condition of food that was sold in the supermarket, the packing food was better than the bulky food;3) The health condition and employee's diathesis of supermarket had something to do with its working way. The health condition and employee's diathesis of supermarkets in independent-working way was better than that in the renter conducting or joint managing way;4) The main potential danger of supermarkets' food came from the direct edible food sold in bulk and processed on the spot;5) The health surveillance department could adopt the quantitative and grading management model about food health surveillance, and so as to enforce the food health surveillance in the supermarkets.Conclusions and Suggestions:1) The health surveillance department should strengthen the prospective surveillance before granting the health license, especially in the large-medium supermarkets whatever was new, rebuilt or expanded, and solved the difficulty of frequency health surveillance in future for non-reasonable design of construction;2) The health surveillance department should enforce the health admitting management, and could issue the health permit lonely for conducting program about food processing in renting areas of supermarket; and carried on the investigation to the renter conducting or joint managing units and chose the units with the high level of management and famous grade as far as possible. 3) To strengthen the surveillance of food processing on the spot and direct edible food in bulk in the large-medium scale of supermarkets; and to strengthen the surveillance about checking the certification when stocking food.4) The health surveillance department should bring the training of the food employee into the job plan, and strengthen the training of the director of supermarket and health manager for raising their health consciousness and promoting the self-management of supermarket. The food employee should be admitted to work after the training of health law and health knowledge.5) The health surveillance department can push the quantitative and grading management system of food health surveillance for promoting the self-strict of enterprise and raising the level of management.6) To enlarge the publicity strength of food health knowledge and raise the public consciousness about food health safety, and build up social surveillance system including the self-strict of enterprise, the surveillance of news' media and the participation of crowd.
