| Research backgroundFirstly this text introduced the importance of food safety and the present condition of food safety in our country. All kinds of quality problems on food safety often occur because food may be contaminated by injurants during production, transportation, storage and selling. Along with the economic development with the operating mode' s change, the modern operation like large supermarkets more and more becomes the main place to buy the foodstuff. But because of the variety of producing mode and products of the bulk foodstuff, and make it become the industry with much safe problem than many of profession in the market management. Research purposeTo understand the concrete hygienic condition on each critical control point of the bulk foodstuff operating of supermarkets in Luoyang city, and to offer the countermeasure of management and the basis for further consummating the activity of supermarkets on food management. Research methodWe investigated all supermarkets with an area over 200 sq. meters with bulk foodstuff management in Luoyang city in April 2004 and in October2004, including each critical control point of the bulk foodstuff operating such as the hygienic approval of food management, hygienic management from the food, food purchasing, food operating environment and equipment, bulk foodstuff label, food operating process etc, and researched the hygienic condition of food management of supermarkets in Luoyang city. Resultsl.The qualified rate of hygienic approval of food management of supermarkets in Luoyang city had increased from 79. 55% in March to 100% in October in 2004.2. On the link of supermarket hygienic management, all investigated supermarkets established the hygienic organization. On the item of establish the fulltime management personnel of food hygiene of supermarket, there was no statistic relationship between March and October (x~2=1. 54, P>0. 05) . On the item of food employee health proof and food employee professional costume, the qualified rate showed the qualified rate in October was higher than that in March. (x~2=9. 72, P<0. 05;X~2=8. 25, P<0. 05)3. On the link of food purchasing, the qualified rate showed the qualified rate in October was higher than that in March. (x~2=6. 55, P<0. 05)4. DiscussionIn the initial stage of "bulk foodstuff hygienic management norm" practicing, there were many supermarkets in Luoyang city still with much quality problems on food safety, each key of supermarket at bulk foodstuff operating that had existed the safe problem of food. Along with the norm taken into practice, Hygiene government enhanced the technique training to supermarket executive, and took 6 months to restructure, the hygiene condition of the bulk foodstuff of the whole supermarket in city had turned to better. Measures1. As the bulk of enforcing and guiding the food safe law, administrative department should enforce the law to combine together with service, and the scathing stroke the behavior of breaking the law, and restructure the market order, and creates for consumer safety, environment of good food shopping.2. The food producer should learn the knowledge of the food hygieneharder, and enhance the employee' s training, build gradually management system of perfect food hygiene, and enhance the management of inner Part, guarantee the people crowd's healthy, and promote the economy development.3. As consumer, should enhance the safe consciousness of food consumption, and develop the good hygiene habit, increase ego protect ability, and protect oneself and their family' s health and safety. |
