With progress and society advance, the object of study for safety science has changed enormously. Food Safety also belongs to the research category of safety science on Macro-security. Since the commercial production of genetically modified plants, a large number of genetically modified foods has been directly or indirectly as food for human consumed. Therefore, the safety of genetically modified foods has been of widespread concern around the world.In this paper, glyphosate resistant transgenic soybeans are used to study object, GB methods are used to determined major nutrients in Glyphosate resistant transgenic soybeans, native soybean and their products. By comparative analysis in their food composition, at the same time, combined with substantial equivalence and the new safety evaluation, analyzed the degree of food safety about glyphosate resistant transgenic soybeans. By the test, obtained the following conclusion.1. Genetically modified soybeans and native soybean are in line with the substantial equivalence in protein, fat, moisture and ash content;2. There is an obvious difference in the content of Soybean isoflavone between genetically modified soybeans and native soybean, they don't accord with substantial equivalence, so the safety need further study. About dietary fiber content, water holding capacity and fiber swelling, they accord with substantial equivalence.3. The content of major nutrients in their soybean products about genetically modifiedsoybeans and native soybean, they accord with substantial equivalence. So, it hay foodsafety.At the same time, accorded with the food safety standards of agricultural genetically modified organisms, analyzed the security about receptor of glyphosate resistant transgenic soybeans. Furthermore, investigated the optimal conditions that obtained the soybean isoflavone and dietary fiber.
