The effects of different energy levels and the different nutrition regulation reagents on the fattening performance and meat quality of Simmental and Holstein was studied to enhance the average daily gain(ADG), slaughtering rate, meat production and meat quality of Simmental and Holstein. This study included two experiments.Experiment 1. The effect of different energy levels on the Simmental and Holstein's production performance and the meat quality. Twenty-four culling cows, 8-year-old, were divided into 3 groups (control, trial 1 and trial 2) with 8 cows in each group(4 Simmental and 4 Holstein) and fed three rations. The cows in control group was fed ration which energy level transisted from lower to higher during fattening, the animals in trial 1 was fed ration transisted from from higher to lower, and the cows in trial 2 was fed ration containing high energy level. The results showed that feeding ration containing high energy level significantly enhanced Simmental's ADG by 38% and the ratio of feed to live weight decresed 27.68%(P<0.05) comparing with the control group. The shearing force value of Simmental's longissimus muscle was reduced 16.44% (P<0.05), but fat content inmuscle was increased 17.22% (P<0.05) comparing with the control group. It indicated that feeding high energy level ration could enhance the fattening and improve the muscle tenderness of culling Simmental cows. The result indicated that shearing force value of Simmental's longissimus muscle was lower than Holstein but fat content in muscle was higher than Holstein. It explained Simmental cows has well muscle tenderness, strong water holding and good juiciness ability comparing with Holstein cows.The feeding method of ration transisted from from higher to lower during fattening increased cows total weight and ADG, decreased feed conversion during the early fattening period, but the totatl weight and ADG were reduced and feed conversion was increased durting the later fattening period, therefore, this method was not suitable for fattening culling Simmental and Holstein.Experiment 2. The effect of the different nutrition regulation reagents on Simmental and Holstein's production performance and the meat quality. Twenty-four culling cows, 8-year-old cows were divided into 3 groups (control, trial 1 and trial 2 ) with 8 cows in each group(4 Simmental and 4 Holstein). Trial 1 added CD-1, Trial 2 added Shi Sheng NO1. The result showed that, adding the CD-1 is the best, comparing to the comparison group, ADG of Holstein group enhanced by 26.92% (P<0.05), feed conversion was lower than the comparison group, the shearing force value of the CD-1 group was reduced by 8.02%,but fat content in muscle was increased 45.28%(P<0.05). It indicated that adding the CD-1 could enhance Simmental and Holstein's fattening and improve the muscle tendemes.
