In the research, the vegetable-soybean Zhe08149 and the oil-soybean Zhengzhou926 were used as samples. From anthesis to seeds being mature the samples were gotten once every ten days. Analyzed the change of protein, oil and volatile substances in the process of soybean grown by the food and feed analyzer and the GC-MS. The 7 Wild soybeans and 6 Semi-wild soybeans were analyzed on the characteristics of volatile substances when seeds changed matured completely.The results showed that there were 75 kinds of volatile substances in the vegetable- soybean Zhe08149 and 98 kinds of them in the oil-soybean Zhengzhou926. Among the two type soybeans the main volatile substances are Alcohols, Aldehydes, Ketones, Esters, Phenolic and Hydrocarbons so on.
