| The heat shock and the Hydration-dehydration treatment is common method in seed processing method. It not only plays the role of sterilization and disease prevention, but also improves the seed characteristics; improve seed germination vigor, increase germination rate, thereby increasing the yield. In this paper, the effects of the different heat shock temperature and heat shock time on the production of soybean sprouts were investigated. The heat shock and soaking conditions were optimized with Response Surface Methodology (RSM), the heat shock temperature, heat shock time, soaking time as the dependent variable. We also studied the biochemical and physical aspects of sprouted seeds under the optimal processing conditions, during the germination process. And the effect on the growth of the soybean sprouts for hydration-dehydration treatment. The main results were as follows:1. The soybean variety "X11" was used to study the effects of the different heat shock temperature and heat shock time on the water absorption rate and the production of soybean sprouts. The results indicated that under different heat shock treatment, Equations between the soybean sucked water rate(y) and the soaking time(x) had been found. The sample after hot shock treatment can significantly shorten the soaking time, saving cost.2. According to the appearance of soybean sprouts, the sprout length and yield of soybean sprouts have no significant change. But the higher temperatures will affect the growth of soybean sprouts; the soybean sprouts grow fastest and the biological yield is higher when heat shock for4min.3. The effects of different heat shock temperature, heat shock time and soaking time on the growth soybean sprouts were investigated with Response Surface Methodology (RSM). Results showed that the optimal condition for the growth of soybean sprouts was at a heat shock temperature of49.8℃, a heat shock time of3.8min and a soaking time of2.2h; and the actual highest sprout length was20.70cm and the yield was5.0.Analysis of variance and confirmatory trials for the regression model suggested that the model can quite exactly predict the sprout length and yield of soybean sprouts under the heat shock and soaking treatment. We studied the biochemical and physical aspects of sprouted seeds under the optimal processing conditions, the results were as follows:heat shock and soaking treatment can significantly improve the soybean sprouts length, soluble sugar content, reduced sugar content, soluble protein content and free amino acids content.4. The Hydration-dehydration treatment was used for the seeds of moderate vigor seeds and low vigor seeds, then, the results show that:For the moderate vigor seeds. The wet filter paper-soaking-drying (MSC-S-D) treatment can promote the growth of soybean sprouts, raise the germination rate of soybean sprouts and increase the biological yield. For the low vigor seeds. The socking-drying treatment, the wet filter paper-drying and the wet filter paper-soaking-drying can restore vitality, promote growth, thereby improving germination rate, increase yield. |
