The pesticide residue level in the agro-food is a main step in safety food production, and to develop fast detection method for pesticide residues is the most important. Testing of pesticide residues is a key method to control the safety of agro-products, particularly for vegetables. There are many testing methods of pesticide residues, of which bio-enzyme method plays an important role. In this study, acetylcholinesterases (AchE) from the liver of mice and the head of bees were used to determine carbamates and organophosphates. The results showed that the AchE from bees were more sensitive against pesticides tested than those from mice. Based on AchE from bees, the testing method for carbamates and organophosphates in vegetables was developed. The statistical parameters of this method were estimated, and good precision and accuracy were found. It showed an I50 value of less 0.1 mg/L against carbofuran, carbaryl, carbosulfan, BPMC, dichlorvos, methomyl, isoprocarb and quinalphos. After the laboratory screening and optimization, the testing kits were developed and used to practice in vegetable markets. All data from laboratories and fields indicate that the method is expected to be a promising alternative to conventional analysis methods, such as equipment analysis.
