| Lycopene is a kind of unsaturated hydrocarbon , which characterized by a high antioxidant and physiological function. It can efficiently prevent breast cancer,the digestive tract cancers and any other kinds of cancers. It can still protect heart,fight agaist senium and boost your body's defence system. Lycopene is generally recognized by the world as a kind of food additives that combines nourishment and pigmentation two functions in one. Therefore, it is being taken more seriously and the demand is rather high both at home and abroad. Lycopene has a good prospect of production and application.This paper firstly studied the pretreatment technology of extracting lycopene from tomato sauce by absorption spectrometry. This process mainly included 3 steps. Enzyme hydrolysis: 0.3% pectic enzyme; 0.1 volume of tomato sauce; hydrolysis temprature, 50℃; hydrolysis time, 2h. Saponification: 0.5mol/L Na2CO3; 0.2 volume of tomato sauce; saponification temprature, 40℃;saponification time 40min. Wash and desiccate by 95%ethanol, 2.5 volume of tomato sauce.Secondly, the paper studied the extraction and purification technology of lycopene. Through experiments, the extraction conditions were obtained: ratio of liquor and material is 3:1, extraction temperature is 50℃, extraction time is 2h, the number of extraction is 2 times; the purification conditions were: vacuum concentrate the lycopene extracting solution at 40℃, the concentrated liquid crystallize and recryst in the frige at 0℃, the time range is 6 hours, the purity of the sample achieved 98%-99%.Finally, the stability of lycopene crystal was also observed. The experimental results show: lycopene crystal is a high-photosensitivity materies and it must be protected form light. Under the protection from light condition, the low temperature was advantage of the preservation of lycopene crystal. |
