Foods are the necessities of life, and the problems of food security are always been thought much by government and society. As one of the important reasons of leading foods polluting. Most of synthesize colorants are diazo compounds, and they have been considered as carcinogenic compound by many international organizations. Diazo compounds degrade to arylamine compounds in corpore, and then arylamine compounds may cause carcinosis by metabolic activity and binding with target cells in vivo. Therefore, there is severe restricts about species and limes of edible colorants in many countries. Because industry dyes always have many side effects such as Carcinogenesis mutagenesis and dysmorphosis, they are forbidden using in food processing. But there isn't a safe limit for them in our country, and detection institutions can't study every one of the hundreds dyes when they usually analyse foods, then forming a shortcoming.Therefore, a method to determination of frequent colorants and dyes in foods by HPLC-MS is developed in this paper, and a simple mass spectra library is established, so that the method of determination colorants and dyes becames easier and faster. This thesis focused on those researches:1. An accurate method was developed for the simultaneous detection of red or yellow water-solubility synthetic colorants in foodstuff by HPLC-EMS. The mobile phase system adapted gradient elution consisting of methanol and 2mM ammonium acetate solution, and the method used negative alternant scan mode, based on these technologies, all dyes can achieve realizing identification and accurate detection at the same time. And a good repeatability, high accuracy with low detection limits and qualification limits were obtained.2. An accurate method was developed for the detection of oil-solubility Sudan I~IV by HPLC-EMS. The mobile phase system adapted gradient elution consisting of acetonitrile and water, and the method used positive alternant scan mode, based on these technologies, dyes can achieve accurate detection, And a good repeatability, high accuracy with low detection limits and qualification limits were obtained.3. 9 kinds of industrial dyes were qualitative analysed by EMS. Dyes were directly injected with the mobile phase consisting of methanol and water, then they are detected by EMS respectively, data were sorted and collected to enrich mass spectra library.4. A simple and facility mass spectra library was established by Microsoft Access.
