| Taking the Ralls apple as the research material, this research established the optimum technological parameters of supersonic extracting conditions of AP, discussed the optimum conditions for AB-8 resin purification of AP, then made a study on their vivo and vitro anti-oxidation character, and further proved their DPPH radical and·OH radical-inhibition effects by means of DPPH and 2-oxidize-D-ribose methods, in the hope of providing elementary data and theoretical bases for the actual application and development of AP extracting technology. The conclusions of this research were as follows:1. Ultrasonic Extraction Method possess following strong points: the higher extraction rate, rapid speed, not changing the structure of the effectual ingredient and so on. Also ultrasonic extraction had particular functions such as mechanical vibrancy and cavitations, then cell walls were broken and menstruum were infiltrated through the cells, so that effectual ingredient was dissolved. Ethanol can act as the favorable extracting solvent for AP; the optimum technological conditions of ultrasonic extraction were respectively 20 minutes of time length, 60℃of temperature, 60% of the ethanol and 6 to 1 of the solvent-dissolved matter ratio, and the ratio of extraction was 2.37g/kgDM. Under the same condition, compared ultrasonic extraction with solvent extraction, the result showed that the effect of ultrasonic extraction was better.2. Selected AB-8 resin to separate and purify AP. Based on the absorption theory of AB-8 resins and started with the physics and chemistry characteristic of resins and the characteristic of absorption medium, this research studied on the select of resolve solvent and the speed of moving and washing. When the concentration of AP was 1.648 mg/mL, the moving speed was 1mL/min, 60% ethanol used as eluent at the speed of 0.5 mL/min, the purity of AP could reach the height of 39.98%, which was approximately 52 times higher than the previous 0.759%, the yield of AP could reach 52.68%.3.
