| Experiments were carried out with 'Italia', 'Meng Lisha', 'Centenial Seedless' and 'Red Globe' grapes to investigate the effect of atmospheric constitutions on their postharvest physiology and biochemistry. The optimum atmospheric concentrations obtained of those grapes can provide theoretical foundation for their atmospheric storage. At the same time, the paper discussed initial quotas of physiology and biochemistry in 'Italia', 'Centenial Seedless', 'Red Globe', 'Mei Renzhi', 'Autumn Black', 'Autumn Red' and 'Ju Feng' grape.It is shown that the optimum quota of 'Italia' grape is 5%O2+3%CO2, 'Meng Lisha' grape 3%O2+3%CO2, 'Centenial Seedless' grape 3%O2+8%CO2, 'Red Globe' grape 3%O2+8%CO2. At suitable low temperature and corresponding optimum quota, the nutrition of each kind of grapes keeps well, some contents of them are restrained rising including alcohol, aldehyde, MDA and soluble pectin while others is restrained decreasing such as propectin, soluble solid and so on, the stalks of grapes keep green and the optimum storage takes on. During storage period, content of alcohol in four grapes is rising day by day. When the concentration of O2 is 5%, the content of alcohol in 'Italia' grape increases with the concentration of CO2 rising, and when the concentration of CO2 is 5%, the content of alcohol increases with the concentration of O2 decreasing. When the concentration of O2 is 3%, the content of alcohol in 'Meng Lisha' grape increases with the concentration of CO2 rising. When the concentration of CO2 is 3%, the content of alcohol in 'Centenial Seedless' grape increases with the concentration of O2 decreasing. When the concentration of O2 is 1%, the content of alcohol in 'Red Globe' grape increases with the concentration of CO2 rising. According to the trend of changes of alcohol and aldehyde, it is shown that the concentrations of O2 and CO2 affect the contents of alcohol and aldehyde unanimously. When concentration of O2 is defined, contents of alcohol and aldehyde will increase with concentration of CO2 rising. When concentration of CO2 is defined, contents of alcohol and aldehyde will increase with concentration of O2 decreasing. During storage period, the grapes became soft mainly because of the decreasing of propectin and the rising of pectin. There is complementary trend between propectin and pectin until ending of storage. In addition, low concentration of O2 can keep the stalks of 'Meng Lisha' grape and 'Red Globe' grape green. At the same time, it can do harm to the stalk of 'Centenial Seedless' grape. According to anatomic structure of peel in 'Meng Lisha' grape, 'Centenial Seedless' grape and 'Red Globe' grape, protective organization of 'Red Globe' grape was the mostthick in those, 'Meng Lisha' the second, and 'Centenial Seedless' the third.In short, the sequence of storage-resistant in four grapes was 'Italia' grape, 'Meng Lisha' grape, 'Red Globe' grape and 'Centenial Seedless' grape according to quotas of physiology and biochemistry and observation of anatomic structure. |
