In the thesis,the development of the study of alicyclic polysulfides ,which had strong flavour and efficient antimicrobial activity, were reviewed.And the synthesis method of Bunte salts was specifically generalized.In order to search novel perfume of cyclic polysulfides ,we designed and synthesized three series of new alicylic polysulfids , among which the compounds of II1, II3-7, III1, III3-7 were new . Their structures were characterized by IR, !HNMR and MS spectroscopes . I 1,2,3,5,6-pentathiepaneII 2-substituted-1,3-dithianeIII 2-substitued-1,3-dithiepaneThe synthesis process of I was improved . To make low cost, diiodomethane was substituted by dibromethane.We added dibromethane to a solution of tetrathiocarbonate directly, so that the reaction was in uniform solution,The method was simple, the reaction time was reduced 12h,and the yield of I was about 20%higher than that of the literature.The thermol analysis(DSC and TG) shows that lenthionine is a much stable perfume before 225℃. It can act as mushroom flavour in cook,saute and decott. but can't in toast and bake.Compounds of II and III were synthesized by Bunte salts. The method was in low cost. The reaction conditions were mild and the yields were good. So it's a facile method for synthesis of alicyclic polysulfides.Preliminary odorous assay shows that compound I has- special mushroom flavor and onion and alliaceous. Most of compounds of Hand III have strong onion flavor, besides few compounds (II5, II6, III5, III6) which shows pungent sulfur sapor. The threshold are determinated in distilled water and oil. It is 0.18ppm in water and 12.9ppm in oil.
