A large number of resources of Gardenia Jasminoid(sGJ)exist in China. The major function of GJ is usually used to produce pigment in factories where its shell is often acted as a kind of fuel to burn stove. The extraction of all, Gardenia Jasminoid oil, yellow pigment and pectin from the fruits of GJ was firstly discussed in this paper and the shell of GJ were used to make activity carbon which can better utilize the resource of GJ and reduce the environmental pollution.Based on the single factor experiment,the optimum parameters and scopes were ensued by the method of orthogonal design. The results were as follows: the extraction temperature is 85℃, time is 8h, the ratio of material to water is 1: 4, on the degree of granule is 40mu respectively.And the yield of oil can be reached to 22.03% on that condition.The composition and its content of oil were determined by GC-MS, which indicated that the major fatty acids are linoleic acid and palmitic acid without complicated ingredients, among them, the content of linoleic is very high.Urea complexation was used to concentrate linoleic acid from the extracted oil and more experiments were done to esterify the oil and by two steps which shows great value.The adsorption ratio of yellow pigments from GJ purified by absorption resin was studied in this paper as well. The color value could be 205.3 after pigment refined which was purified on the column of AB-8.As for the problem of depigment during its use, some experiments indicated that the stability of its pigment could be affected under the condition of light, temperature, pH, oxidation and some metal ions.The pigment was adducted with CMC using its special property. And the best product was obtained to show great stability based on the orthogonal experiments. Some more research on polyphenol extracted from green tea was made to improve the stability of pigment. And the results were as follows: the extraction of polyphenol is 14.96%, purification is 85.42%, the optimum ratio of the mixture (yellow pigment / polyphenol) is 10: 4.
