Bioactive peptides are a set of peptides that exist diversely adjusting the whole activities of organisms and showing special bioactivities. These peptides are inactive within the sequence of the precursor proteins and can be released from the precursor when treated with protein enzymes under proper conditions.Using four different kinds of protein resources as the substrates, through the dual processing of complex enzyme hydrolysis and fermentation, bioactive peptides have been produced. The bioactive peptides powder was obtained by vacuum freeze-drying. And the physicochemical characteristics and bioactivities were researched in the article.Four kinds of protein enzymes have been used to hydrolyze mixture proteins to produce bioactive peptides in this article. The high degree of hydrolysis and varieties functions of bioactive peptides was assured. After heating pre-treatment for 15min at the temperature of 90℃,the enzymatic hydrolyze began. The best conditions of the hydrolysis of the mixture protein have been found by making the optimizing process and the perpendicular experiment. In the experiments, optimum hydrolysis conditions were optimum proportion of the protein enzy mes(Neutrase/Papainase/Chymopapain/Trypsin)were 30:60:5:5, pH 7.0,temperature 30℃,enzyme/subtracts 1% and duration 5h. Under the optimum hydrolysis conditions, the degree of hydrolysis (DH) attained to 24.8%. Through fermented by Lactobacillus bulgaricu, the degree of hydrolysis (DH) of mixture protein hydrolysates attained 33.4% and the level of bitterness dropped from 1.2 to 0.3, which were respectively increased by 34.6% and reduced by 75%.The optimum fermented conditions were 5.0% seed culture, 2% glucose,temperature 30 "C and submerged fermentation 12h.Using the process of vacuum freeze-drying, the bioactivities of bioactive peptides powder was retained at the greatest extent. The product was brown-yellow powder, finely and smoothly, soybean flavour, and little bitter.The bioactive peptides have many good characters, such as high nutritional value, suitable amino acid constitution and good equilibrium of the essential amino acid. Dialysis experiment and Mass spectrograph analysis showed that peptides with the molecular weight below 5000D were 90%;below 3000D were 44%.The process of production was proved scientific, achieving anticipated purpose.Though the acute oral toxicity, 30 days feeding test and genetic toxicity, the bioactive peptides proved to have no toxicities in the recommended dosage;Though the immune function analysis of mouse humoral immunity and phagocytic activities, the bioactive peptides showed its better immunomodulatory function on immune system in rats;Observed the influence upon mice fed with the bioactive peptides powder in weight loading swimming experiment, serum urea nitrogen determinations and liver starch assay results, the bioactive peptides powder have the better function of resisting tired effection.The bioactive peptides could be widely used as a new functional peptide product, which can replace the nowadays-simple functional products.
