The materials of experimentation were Tenebrio molitor L. and Teleogryllus derelictus Gorochov. This study got across filtering research the best extract methods and primary technics guide line of every methods from fresh and dried and wiped off fat worms, and the separated the proteins of insects and compared with the traditional proteins foods, and came out that as resources insects which were Tenebrio molitor L. and Teleogryllus derelictus Gorochov, which were the best extract proteins method and the different constitutes of proteins of insects and traditional foods, and put up with exact science basis for effective exploitation and utilization. This experiment adopted four kinds of extract proteins methods from insects; they were the extract method of alkali, the extract method of salt, the extract method of pancreas proteinase, the extract method of Tris-HCl buffer solution, respectively. Among the methods, it was the first be used to extract proteins of insects with Tris-HCl. The experiment of technics involved concentration, temperature, time, the value of pH, and the ratio of solid and liquid. According to the separation of proteins of insects used PAGE electrophoresis, and the conditions of PAGE electrophoresis and contrasted the different bandings of PAGE electrophoresis of insects and traditional foods. The results were indicated that when extracted insects proteins, using the fresh worms excel than using the insects that wiped off fat. Extracting protein from fresh worms, the best was the method of pancreas proteinase, the second was the method of alkali, the third was the method of Tris-HCl, and the worst was the method of salt. If extracting protein from dried and wiped off fat worms, the sequence of the gained ratio of protein consistented with the fresh worms, but the method of pancreas proteinase very siganificanted different with the others methods. The best condition of method with alkali was that the concentration being 1.5%, temperature being 80℃, time being 60min, and the ratio of solid and liquid was 1:10 for the fresh worms, but for the dried ones the concentration being 0.5%, temperature being 80℃, time being 90min, and the ratio of solid and liquid was 1:10. The best condition of method with salt was that the concentration being 1.0%, temperature being 20℃, time being 1h, and the ratio of solid and liquid was 1:20 for the fresh worms, but for the dried ones the concentration being 1.0%, temperature being 20℃, time being 3h, and the ratio ofsolid and liquid was 1:15. The best condition of method with pancreas proteinase was that the concentration being 0.8%, temperature being 55 °C, time being 3h, and the ratio of solid and liquid was 1:25 for the fresh worms, but for the dried ones the ratio of quality being 0.4%, temperature being 55 °C, time being 6h, and the ratio of solid and liquid was 1:20. The best condition of method with Tris-HCl was that the value of pH being 8.3, temperature being 20°C, time being 30min, and the ratio of solid and liquid was 1:10 for the fresh worms, but for the dried ones the value of quality being 8.3, temperature being 20°C, time being 120min, and the ratio of solid and liquid was 1:10. In the extract proteins methods from insects, the gained ratio of proteins of method with pancreas ptoteinase was the best, the second being the extract method with alkali, the method with Tris-HCl being the third, and the method with salt was the worst. The best conditions of PAGE electrophoresis were that the pH was 8.24, and the concentration of separate glue was 12%, and the pressure was 100-130V. The most proteins bandings were chick and Teleogryllus derelictus Gorochov's eggs; there were 6 and 5 respectively, which could see clearly. Others proteins bandings milk and pork had 2, the muscle of Teleogryllus derelictus Gorochov had 3, Tenebrio molitor L. had 4.
