Nowadays, the studies on bionic vision,hearing and feeling have beendeveloped triumphantly, but the study on bionic olfaction is just underway. Peopledepend not only on their olfaction to distinguish the foods' quality and its degree ofverdure, but also on some animals' acute olfaction to do some specific work longtime ago. Even now many advanced analytical instruments and inspect methods toevaluate and identify agricultural products have been already used, but it iswell-known that the special olfaction function of identification and evaluation cannot be replaced by other ways in many situations. The olfaction sensitivity on allkinds of odors has brought scholars great interest. With the progress of life sciencesand AI, people try to imitate the mechanism of animals and human and it isinevitable that people will develop the intelligent bionic nose with biologicalolfaction mechanism. On one hand, bionic olfaction has a broad application areas, onthe other hand, bionic nose system based on biological olfaction mechanism hasactive effect on the research of olfactory mechanism and the validate olfactoryfoundation. The study on biological olfaction can enrich foundation of the olfactory theoryand people's knowledge on olfaction, found the bionic base for artificial olfaction,provide helps on the surgery operation of human nose; Because of the complexity ofnasal cavity's configuration and the olfactory slit's specialty physiological position, itbrings great difficulty to complete directly experiments on olfaction. Therefore, theway that develops the olfactory model and calculations by computer simulationprovides an effect method for the study of olfaction. China is a big agricultural country with rich agricultural resources, and 127Abstractagricultural products are important material exported. The evaluation of agriculturalproducts is an important procedure for the agricultural products processes andtransportation .The evaluation results not only affect people healthy directly but alsoplay an active part in international and home market competition of agriculturalproducts. In addition, with the changing of people's consume tendency and thedeveloping of consume level, the requirements of agricultural products' quality isbecoming higher and higher. So that it demands objectively new technologies foragricultural products evaluation and classification. Today, we have effective methodsto evaluate agricultural products' color and disfigurement, but we still have trouble indistinguishing odor. The bionic nose makes the qualitative analysis and quantitativeanalysis of agricultural products possible, and provides the advanced technologies forthe agricultural products quality classification for export. Therefore, the paper notonly has an important academic meaning but also has engineering application value,and has the remarkable benefits on economy and society. The development of bionic nose has close relationship with the development ofsensor and data processing technology. The challenges to traditional technologies onsensor and data processing give us evocation to develop an olfaction system which issimilar with mammals' nose using bionic ways. On one hand, at present most of theelectrical noses which are made just only of electrical parts assembly are not basedon the bionic views, especially not on the structure of biology nose. Our bionic nosebased on biological olfaction has remarkable characteristics: the bulk flow ofodorous and concentration in nasal cavity can be controlled; On the other hand, atpresent the software about olfaction identification only has simple algorithm, notusing AI olfactory conceptions, but our intellectualized software on olfactiondesigned by the algorithm based on olfaction model.
