Sea cucumber is not only precious food,but also very rare medicinal material.Modem research shows that sea cucumber can not only strengthen human body' s immune system,resist disease,enhance memory,and provide anti-aging efficacy,it also helps to prevent disease such as diabetes,arteriosclerosis and tumor.Moreover,sea cucumber has unique effect in assisting body and bone growth,healing wound,diminishing inflammation,and slowing organ aging.While living quality is improving,people are more and more concerned about their health issue.The consumption of high quality food,like sea cucumber,is also increasing.Demand exceeds production capacity.Over catching wild sea cucumber is putting this spice in danger.For these reasons,many countries start to develop farming technology of sea cucumber.In recent years the countries to develop sea cucumber aquaculture.However,the over-speeded development and non-standardized operation have caused significant illness and mass death of farmed sea cucumber,and huge economic losses.Meanwhile,the treatment of sea cucumber disease in China has remained on the level of using traditional the use of traditional antibiotics and disinfectants and other treatment,the only increase the pressure on the surrounding environment and farming costs,but also bring drug residues and other food safety issues.The main area of this research covers the topics from the breeding of the seedlings to the integral quality control technologies including farming,processing,storage and transportation.Through the study of the management system of sea cucumber factories,using the principle of HACCP,based on the real situation of ShengTian(Fuqin)Food Production Lmt.,a scientific,complete quality control system is established to meet the needs of massive production of sea cucumber.According to the really situation of the production of frozen sea cucumber,a flow chart of the production is created.Certain critical control points(CCP)are determined by identifying the potential dangers,judging the risks,and analyzing the hazards.In the meantime,this research also studied the critical limit(CL)and the combination of control methods,created HACCP and operation plans,through which the most significant danger posed to sea cucumber production can be prevented,diminished,or reduced to an acceptable level.The ultimate target of this report is to promote the healthy and sustainable development of the farming and processing industry of sea cucumber of Fujian province,and to offer a reliable reference for the establishment and implementation of a high level quality control system.
