The Analysis Of Muscle Quality And The Relative Expression Of The Lipid Metabolism-related In Schizothorax Prenanti Tchang

In this study, The conventional indicators of Schizothorax prenanti Tchang were tested accroding to the national standards about three different weight ratings.The conventional indicators of Schizothorax prenanti Tchang’s serum in different weights were measured by using kits. The composition of amino acids and fatty acid were analyzed through automatic amino acid analyzer and GC-MS. Real-Time PCR Instrument was emplolied to determine the relative expression of the PPARa, PPARy, H-FABP, PGC-1α in muscles,liver and the head kidney of Schizothorax prenanti Tchang in different weights.Through the analysis and comparison,we can obtain the following conclusions:1.The moisture, ash and pH of Schizothorax prenanti Tchang’s muscles,there were no significant difference (p>0.05) among Large,medium and small fishes;The fat content and protein content of the small,and medium Schizothorax prenanti Tchangs was significantly higher than the content of the large ones (p<0.05),the content of fat fish of small one was significantly higher than medium one in muscle (p<0.05); The rate of water loss of the large fish was higher than the small and medium ones;The content of amino acids and fatty acid in the large, medium was similiar to the small one.The content of umami amino acid,essential amino acids and total amino acid in small and medium fishes were higher than the big one.There were 21 kinds of fatty acids in the three different weights fish.The distribution of palmitic acid,oleic acid,linoleic acid, EPA and DHA in small and medium Schizothorax prenanti Tchang is higher than large one.Through comprehensive analysis,the quality of small and medium Schizothorax prenanti Tchang’s meat was better than the large one’s.2.There were no significant difference TC, TG, HDL-C, LDL-C, VLDL-C in the serum of Schizothorax prenanti Tchang of different weight (p> 0.05).However, It was discovered that the TC,TG,LDL-C of serum in medium Schizothorax prenanti Tchang is higher than msall one, which is higher than the big one(p> 0.05). The trends of the change about TC,TG,LDL-C in serum was similar to the trends of crude fat in muscle among the Schizothorax prenanti Tchang of different weight.There were significant differences about the relative expression of the PPARa, PPARy, H-FABP, PGC-la in muscles,liver and the head kidney of Schizothorax prenanti Tchang in different weights(p<0.05). The trend of relative expression of PPARy, H-FABP and the TC,TG,LDL-C in serum was similar to the change of crude fat in mucle of Schizothorax prenanti Tchang in different weights, They might have a positive correlation. The trend of relative expression of PGC-1α contracted with the crude fat in mucle of Schizothorax prenanti Tchang in different weights, they might exist negative.The contrary of the trend of relative expression of PPARa was the change of the TC, TG, LDL-C in serum of Schizothorax prenanti Tchang in different weights,there wew a negative correlation between them possible.
