With the continuous improvement of residents living standards and changes in their lifestyles,more and more people have begun to pay attention to functional food and skin care products that are beneficial to their physical and mental health,bioactive substances are important components of functional food and skin care products.V_Ehas a good antioxidant,can reduce the harm of various toxins on the human body,on human safety,non-toxic side effects.Selenium-enriched Peptides is one of the important sources of organic selenium.It has the characteristics of easy absorption,low sensitivity,high nutritional value,high Bioavailability and less side effects.However,both V_E and Selenium-enriched Peptides are highly unstable due to their unique molecular structures and are sensitive to environmental stresses,resulting in low bioavailability or short shelf life.Now all kinds of new encapsulation technology of bioactive substances provide an important way to broaden the application of V_Eand Selenium-enriched Peptides,in which multi-emulsion technology can realize the simultaneous encapsulation of water-soluble and oil-soluble bioactive substances,at the same time,it has multiple protection and slow-release effects on the active substances,which has been widely concerned in the field of active substances packaging.In this paper,the application of multiple emulsions in the transport of V_Eand Selenium-enriched Peptides is studied systematically,two different types of multiple lotions loaded with Selenium-enriched Peptides and V_E were designed,and then microencapsulation of the lotions was carried out to broaden their applications in food,expand its application in skin care products.Therefore,the release rate of V_Eand Selenium-enriched Peptides is delayed,the action time is prolonged and the storage stability is enhanced.A reasonable SP/V_E loaded microcapsules,skin lotion and skin cream will greatly promote its application in the field of food and daily necessities.The research contents and conclusions are as follows:(1)In order to find out the best technological formula for preparing multiple emulsions,OSA starch and PGPR were used as hydrophilic and hydrophobic food-grade emulsifiers to prepare O/W/O and W/O/W emulsions by two-step emulsification method.The optimal formulation of O/W emulsion was 4%OSA starch,the ratio of oil to water was 2:8,the ultrasonic power was 400W and the ultrasonic time was 15min.On this basis,we further prepared O/W/O emulsion,in which the optimum technological formulation is 8%PGPR,the emulsified oil ratio is5:5,and the external emulsified ultrasonic power is 200 W.The process of W/O/W double emulsion is 6%PGPR.The ratio of oil to water is 3:7.The internal emulsion was 400W,4%OSA starch,the ratio of emulsion was 3:7 and the external emulsion was 200W.It is worth noting that the conversion of two kinds of O/W/O and W/O/W emulsions can be realized by changing the order of adding emulsifiers.In addition,O/W/O and W/O/W emulsions were used for the co-encapsulation and loading of Selenium-enriched Peptides and V_E.We found that W/O/W emulsion and O/W/O emulsion had effective encapsulation ability for Selenium-enriched Peptides and V_E.SP/V_E-W/O/W emulsion shows good p H stability and longer storage stability at low temperature.SP/V_E-O/W/O emulsion had good antioxidant activity.The results of human fuzzy digital sense evaluation and electronic nose show that these two emulsion systems can effectively mask the bad smell of Selenium-enriched Peptides and achieve the effect of odor masking.(2)In order to facilitate the transportation and storage of functional foods,the emulsion of SP and V_E was successfully prepared on the basis of the first chapter,the microencapsulation system of SP and V_E was constructed by emulsion-drying method.The results showed that when the contents of OSA Starch,SP and V_E were 15%,5%and 0.5%,respectively,the particle size and water activity of the microcapsules were the smallest,and the entrapment efficiency of SP and V_E were the highest,78%and50%respectively.The microcapsules have good dispersibility in aqueous solution and retain the structure of multiple emulsions.The results of TGA and thermal stability analysis showed that SP had higher thermal stability in microcapsule system.In the simulated gastric digestion stage,the microcapsule can keep the emulsion in the state of low p H and pepsin,and maintain the SPretention rate of more than 70%,under the action of digestive enzymes,the structure of emulsion was destroyed,the release rate of free fatty acids increased,and the retention rate of SP decreased gradually.The electronic nose results also confirmed that the microencapsulation could play a good role in masking the bad smell of SP itself.(3)Based on the first chapter,to study the application of V_E and SPO/W/O multiple emulsion in skin care field.The effects of different formulations on the physical and chemical properties of SP and V_E skin lotion and skin cream were studied by preparing different formulations of SP-V_E skin lotion and skin cream.The results showed that all the formulas met the relevant national standards except those of SP and V_Econtent 2%and 0.5%,White Vaseline:Sweet Almond Oil=1:9,respectively,product stability is good.The results show that Vaseline and beeswax can improve the moisture retention of skin care products,skin lotion and skin cream have good moisture retention.The antioxidant results showed that different formulas of skin lotion and skin cream had good antioxidant activity,and the tyrosinase inhibition rate indicated that both skin lotion and skin cream could achieve whitening effect by inhibiting the production of melanin.The results of human sensory evaluation showed that SP and V_E contents were 1%and 1%respectively,the formula of White Vaseline:Sweet Almond Oil=2:8,the formula of selenium-enriched Peptides and V_E contents were 1%and 1%respectively,the formula of beeswax:sweet almond oil=1:9 was superior to other formulas in the overall sensory results.
