In recent years,with the development of economy,people’s quality of life has been continuously improved,the pace of life has been accelerated,and some diseases caused by diet are increasing.People’s attention to food is no longer only satisfied with satiety,but has begun to shift to nutrition,safety and health,and getting nutrition from food conveniently and quickly has become the focus.The application of instant meal replacement food is born.Moreover,most of the foods we eat for a long time are refined foods,resulting in insufficient intake of coarse grains.Therefore,the development of a instant multigrain nutritional meal replacement powder has certain development prospects.In this paper,two kinds of products were developed by microwave curing and formula design,and the quality characteristics,nutritional enhancement,preparation characteristics,flavor characteristics,nutritional characteristics and shelf life of the products were studied by using the grains as the main raw material.The result is as follows:Through the single factor optimization experiment,the optimal microwave curing process parameters of millet,oat rice,lotus seed,blood glutinous rice,panda bean and buckwheat rice were determined as soaking time is 30 min,power-material ratio is 6.00W/g,microwave time is 5 min;Soaking time is 5 h,power-material ratio is 8.00 W/g,microwave time is 5 min;soaking time is 4 h,power-material ratio is 8.00 W/g,microwave time is 8 min;soaking time is 4.85 h,power-material ratio is 8.20 W/g,microwave time is 6min;soaking time is 5.20 h,power-material ratio is 8.40 W/g,microwave time is 8 min;soaking time is 2.95 h,power-material ratio is 6.80 W/g,microwave time is 6min,respectively.The formula of blood glutinous rice panda bean buckwheat rice meal replacement powder is: panda bean 15%,blood glutinous rice 13%,buckwheat rice 16%,black sesame13%,wolfberry powder 15%,longan powder 7%,peanut powder 15%,red date powder 6%;The formula of millet oatmeal rice lotus seed meal replacement powder is: oat rice 30%,millet 18%,lotus seed 16%,black sesame 7%,chia seed 19%,yam powder 3%,red date powder 4%,carrot powder 3%.From the analysis of nutritional components,vitamin components,mineral elements,physical and chemical indicators,and microbial indicators,the quality of the two products conforms to industry standards and meal replacement food group standards.The supplements of vitamin B2,folic acid,vitamin C,and calcium carbonate in the meal replacement powder for blood glutinous rice panda bean buckwheat rice,millet oat rice lotus seed were 0.3 mg/100 g,110 μg/100 g,30 mg/100 g,and 400 mg/100 g,respectively.The optimal particle size level of the two kinds of cereal meal replacement powder was 140 mesh,the water temperature was 70 ā„ƒ and 20.0 g product required 100 m L water.The results of flavor substances show that there are 30 kinds of volatile flavor substances in blood glutinous rice panda bean buckwheat ricemeal replacement powder,35 kinds of volatile flavor substances in millet oat rice lotus seed meal replacement powder,among which compounds such as aldehydes,alcohols and pyrazine play a major role,and are the miscellaneous grain meal replacement powder.The aroma substance enhances the taste of the product.The results of nutritional evaluation showed that the EAA/TAA and EAA/NEAA of the two formulas were 43.91%,41.92% and 78.27%,72.11%,respectively,which were in line with the protein model proposed by FAO/WHO,and had high nutritional value.According to the ASLT experiment,the measured shelf life of the product is 15 months.
