| The purpose of this experiment is to analyze the functional nutritional components,improve the product highlights,and provide basic data for future development and utilization of tail fat in Sunid sheep.Fatty acid content,sn-2 fatty acid composition and conjugated linoleic acid content were determined by GC-MS and the contents of four fat-soluble vitamins and cholesterol were determined by HPLC in Sonid sheep tail fat as experimental group and its perirenal fat,Wuzhumuqin sheep tail fat,perirenal fat,cattle sebum of grazing+fattening and pig sebum of house feeding as control group.The results are as follows:（1）The contents of C16:0,C18:0 and C18:1 were the highest.They were 22.53%,18.91%and 39.83%respectively.The content of stearic acid was significantly lower than that of Sunid sheep fat（40.76%）and Ujumqin sheep tail fat（30.07%）.The ratio of n-6/n-3was 3.20;The sn-2 position fatty acids were higher in C16:0 content and C18:1 content,which were 31.61%and 43.27%respectively;The content of conjugated linoleic acid was0.79%,which was 5～10 times higher than that of grazing+fattening’s cattle sebum（0.14%）and pig sebum（0.05%）（P<0.05）.（2）The contents of fat-soluble vitamins in sheep tail fat of Sonid sheep were VA36.26μg/100g,VD317.61μg/100g,VE 860μg/100g and VK2181.08μg/100g,respectively.Compared with the animal fats in the experiment,the VK2content was the highest,and the VE content was significantly higher than the sebum of grazing+fattening cattle（240μg/100g）and the sebum of house feeding pigs（60μg/100g）（P<0.005）.The content of VD3was the lowest.（3）The cholesterol content of sheep tail fat was 50.01 mg/100g,which was significantly lower than that of grazing+fattening cattle sebum 70.05 mg/100g and house feeding pig sebum 74.11 mg/100g（P<0.05）.This experiment revealed the functional nutritional components of tail fat in Sonid sheep,and determined that it is a healthy animal fat with n-6/n-3 ratio suitable for human health,rich in conjugated linoleic acid,fat-soluble vitamins and low cholesterol. |
