With the continuous improvement of people’s living standards,the requirements for"clothing,food,shelter and transportation" are also increasing.Among them,the pursuit of food has gradually risen from food and clothing to safety,deliciousness,and beauty,in which safety is the guarantee and the focus of people’s attention.Supermarkets are the most direct and widest channels for people to obtain food today.To ensure the safety of food exported by supermarkets is to maintain the health of the people and social stability.How to effectively evaluate the food safety risk level of the supermarket and guide the supermarket to improve purposefully the supermarket management is an urgent problem to be solved.This article discusses food safety issues in supermarkets from the perspective of risk assessment.After reviewing a large number of domestic and foreign literature,combined with the national "Code for Food Safety Operation in Supermarket(Trial)","Code for Food Safety Management in Supermarket(Consultation Draft)","Creation Standard for Reliable Meat and Vegetable Demonstration Supermarket",and other specifications and standard content,the experts and two After this discussion,an index system for food safety risk assessment was determined.After that,based on the characteristics of food safety risk assessment indicators,a questionnaire was designed to conduct a survey,and a fuzzy comprehensive evaluation model was established based on network hierarchical analysis to determine the weight of the indicators.Finally,a chain supermarket in Xiamen was selected as the empirical research object,and the food safety risk evaluation index system and risk evaluation model constructed in this paper were used to carry out the food safety risk evaluation of the supermarket.This article discusses supermarket food safety issues from the perspective of risk assessment.Through consulting a large number of domestic and foreign documents,combining with China’s "Supermarket Food Safety Practices(Trial)","Supermarket Food Safety Management Practices(Consultation Draft)","Safety Meat Vegetable Demonstration Supermarket Creation Standard" and other specifications and standards After two discussions by experts,the supermarket food safety risk evaluation indicator system was determined.The system included 7 first-level indicators and 22 second-level indicators.After that,according to the characteristics of supermarket food safety risk evaluation indicators,a questionnaire was designed to investigate,with the help of Super Decisions software to calculate various matrices to determine the index weights,and a fuzzy comprehensive evaluation model based on network hierarchy analysis was established.Finally,a chain supermarket in Xiamen City was selected as an empirical research object,and the supermarket food safety risk evaluation index system and risk evaluation model constructed in this paper were used to conduct supermarket food safety risk evaluation.Through research,the following conclusions are drawn:Among the seven first-level indicators that affect the food safety risk of supermarkets,the basic situation of the supermarket itself has the greatest impact(the weight is 0.3263),followed by the quality of supermarket personnel(the weight is 0.2308);The impact of purchase acceptance(the weight of 0.05803)and site equipment(the weight of 0.08239)is relatively small.Among the 22 second-level indicators,the five most critical factors affecting supermarket food safety risks are:supermarket credit status,professional staffing,supermarket certification status,supermarket qualification status and employee ethics;the five least impacts are:product inspection,Facilities and equipment management,quality inspection,quality preservation and raw material selection and transportation.In addition,the results of empirical research indicate that the selected supermarkets have a higher food safety risk level in the transportation and storage,site equipment and production and processing links.
