In this thesis,the relevance between carbohydrate and the interior quality was analysed in terms of raw materials,production process and products,and the key objects to be regulated was determined.The controllable range was determined with the application of biological,chemical and physical ways to regulate the amount of carbohydrate in different key processes.Finally,the quality of reconstituted tobacco was enhanced with the combination of different regulatory methods.The significance of this study is to through the control of different carbohydrate compounds,form a systemic and complete regulation method can be established.Using microorganism fermentation,the content of water soluble total carbohydrate and reducing carbohydrate could be reduced by 100%.After the fermentation processing of the tobacco stem extracting solution,the quality and the quantity of the reconstituted tobacco fragrance is enhanced,stimulation and discomfort sensation is reduced,the overall quality of suction is improved.When pectin enzymes preparation was added in the slurry,the content of pectin was reduced by 57.00%.When pectin enzymes preparation was added in the tobacco stem extracting solution,the content of pectin was reduced by 42.03%.When amylase preparation was added in the slurry,the content of starch was reduced by 57.14%.In the water extraction and alcohol precipitation way,when the final concentration of ethanol is 50%,water soluble total carbohydrate could be reduced by 91.00%.When the final concentration of ethanol is 40%,reducing carbohydrate could be reduced by 99.84%.If inorganic acid is used to extract the tobacco stem,the content of water soluble total carbohydrate and reducing carbohydrate could be removed to 0.Change the processing conditions,the content of pectin could be reduced by 39.33%.By applying organic acid technology,the starch content of tobacco stem extracting solution could be reduced to 0.92%of original solution.The starch content of solids could be reduced to 20.85%.The pectin content of tobacco stem extracting solution could be reduced to 22.08%of original solution.The pectin content of solids could be reduced to 38.44%.With the method multi-stage extract,can make the extraction rate of water soluble total carbohydrate in extracts is 42.51%,in solids is 38.56%;extraction rates of reducing carbohydrate is 34.14%and 34.14%.With the method of adding fructose and glucose,Greater than 50%added,water soluble carbohydrate and reducing carbohydrate rose more than 100%.Use the microbial ferment tobacco stem extracts,lets the content of water soluble carbohydrate and reducing carbohydrate to 0,then use the pectinase preparation and amylase preparation,that the content of starch and pectin in the slurry is reduced,adding the glucose to tobacco stem extracts,control the ratio of carbon and nicotine is 10:1,use the samples make the reconstituted tobacco,sensory evaluation show treated samples make tobacco rods the fragrance components has improved,amount of fragrance increase,tobacco rods of irritation are weakened,reduce the offensive odor in the mouth,soft smoking flavor.
