The black currant(Ribes nigrum L.)is small berry fruit tree species of saxifragaceae family ribes.It has a large cultivation area in Heilongjiang Province and is one of the dominant fruit tree species in cold regions.Its fruits are rich in anthocyanins and other physiologically active components,which can be developed into various processed products,and can also be used as raw materials for health-care foods with relatively broad application prospect.In this study,natural deep eutectic solvents(NADES)was used as the extractant,the composition of anthocyanins in peel of 19 black currant varieties were analyzed qualitatively and quantitatively by ultra-high performance liquid chromatography-mass spectrometry(UPLC-MS)with ultrasonic-assisted extraction;the antioxidant activities of anthocyanins in different black currant varieties were investigated,and 19 black currant varieties(lines)resources were preliminarily evaluation from the perspective of anthocyanin composition by mathematical analysis,which provided theoretical basis and technical support for the application of anthocyanin from black currant.The main results for this study were followed as:(1)The extraction effect of lactic acid-1,2-propylene glycol-glycerol was better,and the extraction rate of anthocyanin was significantly higher than the conventional extraction solvent(70% methanol).(2)The qualitative analysis showed that 26 anthocyanins were identified in black currant.The kinds of anthocyanin in the ‘Нестор Козин’ was the most abundant.The quantitative analysis showed that the content of anthocyanins in the peel of 19 black currant varieties(lines)between35.96 and 76.57 mg/g,and there were significant differences in the anthocyanin content in different black currant peels.(3)The anthocyanins of delphinidin monoglycoside,anthocyanin monoglycoside,anthocyanin diglycoside and anthocyanin diglycoside were mainly contained in black currant peel.Among them,the content of anthocyanin diglycoside has an absolute abundance in different varieties.(4)The anthocyanin,delphinidin,malvidin and peonidin played an important role in the composition of anthocyanins in black currant.The highest comprehensive score of anthocyanin was found in peel of ‘Нестор Козин’.The 19 cultivars(lines)were divided into three categories.(5)The best ability of DPPH radical scavenging,ABTS radical scavenging and FRAP radical scavenging were detected in anthocyanin in peel of ‘Нестор Козин’.Acorrding to the antioxidant ability,19 black currant varieties(lines)were divided into two categories.For the comprehensive antioxidant abilities,category I was higher than that of category II.(6)The content of delphinidin was significantly positively correlated with the ability of DPPH radical scavenging,ABTS free radical scavenging and FRAP free radical scavenging(P<0.01).The content of anthocyanin was significantly positively correlated with the ability of FRAP radical scavenging(P<0.01).
