This article takes infant formula milk powder as the research object,through the determination of nutrients,physical and chemical indicators,changes in nutrients during the shelf life,and storage techniques(temperature,humidity,storage time,packaging materials)during the shelf life,and explores the stability of the storage conditions to the nutritional fortifiers The impact.The research results are mainly divided into three parts:1.The vitamins,minerals,microbial indicators,moisture content,brewability,and powder structure of the 1st milk powder(4 brands)were measured,and the results showed that:the 1st milk powder all the indicators are in line with national standards or corporate standards,And there are differences between different brands.2.Taking the 1st and 2nd milk based powder as the research object,explore the changes of micronutrients during the storage period.The results showed that during the storage period,the micronutrients of the first and second stages of milk based powder all showed a downward trend,fat-soluble vitamin A,vitamin D,vitamin E,and vitamin K1all attenuated to a certain extent,and the attenuation rate of the first stage milk based powder Respectively:22.67%,24.14%,34.74%,the attenuation rates of the two-stage milk based powder were:13.1%,20.77%,30.71%.This indicates that fat-soluble vitamins are susceptible to a certain loss due to the influence of the external environment during storage.Water-soluble vitamin B1,vitamin B2,niacin,folic acid and biotin show relative stability during the shelf life.The attenuation rates of the first stage milk based powder are:-8.54%,-8.32%,6.98%,0.88%,8.97%,the attenuation rates of the two-stage milk based powder were:-6.95%,0.49%,2.71%,2.21%,2.1%.The content of vitamin C,vitamin B6and vitamin B12showed different degrees of attenuation during the shelf life.The attenuation rates of the first stage milk based powder were 11.63%,8.13%,and 9.91%,and the attenuation rates of the second stage milk based powder were respectively.They are:6.74%,13.17%,and 17.94%.Compared with vitamins,mineral elements are relatively stable during the storage period.Among them,iodine,iron,and chlorine have a certain degree of attenuation.The attenuation rates of the first stage milk based powder are36.06%,9.46%,and 8.51%,respectively,and the second stage milk based powder attenuation rate Respectively:20.5%,4.26%,9.45%.3.Through single factor experiment and orthogonal experiment,explore the influence of storage conditions on nutrient attenuation.The results show that:take temperature,humidity and storage time as single factors,carry out single factor experimental design,and get the optimal interval,respectively:The temperature range is 10?-30?,the humidity range is 25%RH-45%RH,and the storage time is 10-30 days.Furthermore,the vitamin C attenuation rate and the vitamin E attenuation rate are used to investigate the indicators,and the orthogonal test of three factors and three levels is carried out.Based on the comprehensive indicators,it is concluded that temperature 10?,humidity 35%and storage time 30 days are the best storage.Conditions,and verified that it is the optimal storage conditions under the existing design.
