Objective:Understanding Guangxi EMU(electric multiple unit)train to sell cold chain bento sanitary condition,combined with the tracking survey EMU cold chain bento production,processing,storage,transportation,transshipment and storage on the train,sales each link,find out the main effect of cold chain bento coliform group exceeded,exceeded the total number of colonies of weak links,determined critical control point,cold chain bento safety management countermeasures and suggestions were put forward to ensure high speed train catering bento quality,increase the competitiveness of the railway transportation industry,protect the bento safety of the vast number of visitor,to create a comfortable,hygiene,health andsafetyoftravel environment.Methods:The research object from the 2014-2015 sampling inspection of 11 kinds of264 Guangxi EMU cold chain bento and 4 times in 2015 follow-up surveys of Guangxi EMU cold chain bento production,processing,storage,transportation,unloading,sales each link.Survey data with software Epidate3.1 establish database,using SPSS 17.0 software for descriptive statistics,chisquare test,evaluation of the hygienic quality of cold chain bento and evaluation of cold chain bento for storage,transportation,transshipment and storage on the train.Critical control point judgment tree was used to determine critical control point.According to the principle of HACCP(Hazard Analysis Critical Control Point)make a plan.Result:.2014-2015 total microbial test 264 cold chain bentos,the passing rate was 69.3%,2015 qualified rate of cold chain bento was higher than 2014.The580 g cold chain bento had the lowest passing rate was 55.2% in different specifications.In Different kinds of cold chain bentos,fish flavored-pork with minced pork-potatoes had the highest over-standard rate of pure coliform bacterial was 31.8%;The beef potato with Braised pork meatballs had the highest over-standard rate of both was 30.8%.Cold chain bentos in the third quarter had the highest over-standard rate of pure total bacterial count and both were 75.6% and 82.1% respectively..In different quarters of 2015 to Guangxi EMU catering base tracking survey.In links of.transportation and transshipment,the third quarter refrigerated truck and incubator had the lowest temperature qualifiedrate of were 60% and53.3%respectively..Combined with EMU cold chain bento microbiological test results and tracking survey,cooking,heating,packaging,practitioners,transportation,transshipment,storage on the train were as critical control point(CCP).Conclusion:.The microbial test results show that the Guangxi EMU train cold chain bento far from being optimistic,the production,processing,transportation,transshipment and storage on the train should be improved,Make a HACCP plan to further improve the quality of Guangxi EMU train cold chain bento.
