The application of Polygonatum in health products has high research value.Because Polygonatum has a good effect on promoting human health,Polygonatum products and foods are widely welcomed,so Polygonatum has considerable market prospects.At present,the beverage industry is developing rapidly.In order to satisfy consumers' increasing pursuit of health,beverage companies have produced a variety of new health-friendly beverages,such as low-sugar beverages and vitamin beverages.Therefore,for plants such as Polygonatum that are rich in biologically active substances and have excellent health functions,research on beverages is very necessary.In this study,the polysaccharides from Polygonatum were extracted by complex enzymes,and the response surface experiment was used to optimize the extraction scheme.Then the optimized process was used in the production of Polygonatum beverages,and its sensory properties,blood sugar regulation ability and antioxidant properties were evaluated.The main researches on Polygonatum Beverage were: 1.Determination of the optimal conditions for extracting Polygonatum Polysaccharides assisted by complex enzymes.Through single factor experiment and response surface design screening,the optimal extraction process conditions of Polygonatum polysaccharides were: enzymatic hydrolysis temperature 53.20 ?,material-liquid ratio 1:19,enzymatic hydrolysis time 51 min,and enzyme addition amount was 1.50%.The average yield of polysaccharides from Polygonatum extract was(9.11±0.16)%.2.Choose the type of clarifying agent suitable for Polygonatum beverage.This study compared the clarifying effects of ZTC1+1II clarifying agent,chitosan,chitosan hydrochloride and diatomaceous earth.By comparing the retention rate of polysaccharides and sensory scores,it was concluded that ZTC1+1 clarifying agent was the best choice,when the amount of ZTC clarifying agent is 10%,the sensory score is 91,the transmittance is84.2%,and the polysaccharide retention rate is 91%.3.Determine the product formula of Polygonatum beverage.The study took Polygonatum extract,citric acid,sodium citrate and compound sweeteners as single factors,and obtained the formula with the highest sensory score of Polygonatum beverage through orthogonal test: The dosage of Polygonatum extract was 50%,the dosage of citric acid was0.4%,the dosage of sodium lemon was 0.6%,the dosage of compound sweetener was 0.005%,and the average sensory score was 90.4.4.Selection of the sterilization process of Polygonatum beverage: The best sterilization conditions were sterilization temperature of 100? and sterilization time of25 min.5.Assess the in vitro antioxidant capacity of Polygonatum beverage.By measuring the DPPH free radical scavenging ability and the hydroxyl scavenging ability of the Polygonatum beverage,it was proved that the Polygonatum beverage had a certain in vitro antioxidant capacity.6.Evaluate the blood sugar regulating ability of Polygonatum beverage,Polygonatum extract,and Polygonatum Polysaccharide.Polygonatum crude polysaccharide solution,Polygonatum beverage,Polygonatum extract,drinking water MAGE values were 2.22mmol/l,3.05mmol/l,3.10mmol/l,3.53mmol/l,respectively.It was concluded that in terms of the ability to regulate blood sugar,Polygonatum polysaccharide solution> Polygonatum beverage> Polygonatum extract> drinking water;mainly due to the ability of Polygonatum polysaccharide to regulate blood sugar.It proved that Polygonatum beverage had good blood sugar regulation ability.7.Detect the nutrient composition and total bacterial count in the Polygonatum beverage,and perform sensory evaluation on the Polygonatum beverage: the total acid content of the beverage was 0.32%,and the polysaccharide content was 2.3mg/m L.The total number of bacteria was 0,and the coliform group was not detected.The sensory evaluation results of the finished beverage showed that the Polygonatum beverage had a unique brownish-red color of processed Polygonatum,the fragrance of Polygonatum,and there was no visible impurities.
