Resistant starch(RS),which can not be digested and decomposed effectively by the small intestine,is mainly due to the fact that resistant starch can avoid the decomposition of digestive enzymes.During the preparation process,resistant starch will have an ordered crystallization area.The amylase is kept away from the D-glucoside bond in the crystalline region and further affects the binding of the starch molecule to amylase to produce resistance.Resistant starch is characterized by the availability of dietary fiber,which can be used by intestinal microorganisms in the colon and fermented to produce short-chain fatty acids(SCFA).The SCFAs have a wide range of roles,which not only inhibit the heterogenicity of sugar,but also effectively activate the synthesis of glycogen in human liver cells,and further affect the secretion of hormones in the intestine,which is beneficial to many aspects of the body's function.It plays an extremely important role in maintaining the physical health of the human body.In contrast,different types of RS also have different types of fermentation patterns in the intestine,which can have different degrees of influence on blood sugar and the intestinal environment.According to the data,few studies have been conducted in China on intestinal function and analysis of the differences in physiological functions of different types of RS.The foreign research on RS is only for the comparison of RS2 and RS3,or only for the study of RS2,and there is very little data for the comparison between RS2,RS3,and RS4.Therefore,on the basis of different starch raw materials,different types of resistant starch were prepared by cyclic aging method,and as the research object,the animal Kunming(KM)mice needed for the experiment were used.The relationship between blood sugar,intestinal microorganism and resistant starch was explored effectively,and the different effects of different types of resistant starch on diabetic mice were further analyzed,so as to provide some reference for promoting the analysis of physiological functions of resistant starch.The main contents of this article are:1?mold conditions optimization;2?resistant starch to blood sugar and intestinal flora regulation of the analysis;3?resistant starch in vitro hypoglycemic experimental analysis;4?Analysis of different effects of resistant starch on blood sugar and fatty acids in diabetic mice.
