Bread and pastry products are variety,organization and soft,easy to carry,easyto eat,etc.,becoming an essential food for people's leisure travel.As a kind of important food,there is a great demand of bread and pastry in our country's food market.However,due to various factors such as raw materials,processing conditions and other factors,resulting in a large difference in the quality of the city's bakery products,the development and quality of bread and pastry products have become more and more concerned by consumers.In this paper,through using the method of partition to research,analyze from the bread and pastry production status and quality status,existing problems and the suggestions to solve the problem,making a comprehensive analysis and research of pastry products..The results showed that: the distribution of the bread and pastry processing in Shanyang county is relatively concentrated,The number of small workshops,in Chengguan Town,Zhongcun Townn,Manchuanguan Town accounted for the total number of small workshops are: 53%,9%,8%;The average annual number of small workshops is increasing by 23.5%And practitioners in the scale of 6 or more number of mix proportion of the total number of small workshops from 4.35% in 2012 to 17.14% in 2014,Small workshops grow rapidly in number and developde rapidly in the scale.output increasing at the rate of 46% per year on average,the consumption potential is relatively large.Because of the low level of the production process and technology and health quality of small workshops bread pastry products,the stability of the product is poor;while the internal management level of the small workshops is not high,the imperfection of the quality management system needs to improve;Sector supervision is inadequate,but the overall regulatory capacity to enhance the space is relatively large;The local bakery products are single but has obvious local characteristics,product improvement is more solid,the space of product quality improvement and market development is relatively large,it will lay a solid foundation of Shanyang County bread and pastry small workshop to form a standardized,large-scale production chain and brand name.The product quality of the bread and pastry in this district needs to be improved,it is necessary to continue to strengthen production management,improve and enhance the production process technology,improve product quality and promote the rapid development of the industry.
