As people’s dietary needs continue to diversify,population survival is increasing food consumption,and food consumes a large amount of greenhouse gases while consuming large amounts of water resources and land resources.Food consumption has become the main driving force for environmental resource issues such as climate change,loss of biodiversity,land degradation,and lack of freshwater resources.Therefore,sustainable food consumption has become an important topic of global concern.In order to explore sustainable food consumption patterns,the study based on the definition of sustainable diet by the Food and Agriculture Organization of the United Nations(FAO),and use the FAO food consumption balance sheet data to analyze the characteristics and evolution trends of Chinese residents’food consumption patterns from the national level;Based on the comprehensive footprints of food consumption environment pressure evaluation theory and method,on this basis,focus on China’s 1978-2013food consumption ecological footprint,carbon footprint,water footprint and environmental comprehensive carrying capacity dynamic changes characteristics,based on comprehensive footprint The formation mechanism of sustainable food consumption patterns,so as to construct a sustainable food consumption model that meets the food consumption habits of Chinese residents,meets the nutritional needs of food,can pay for residents,reduces the pressure on environmental resources,and is feasible.The research results are as follows:(1)In terms of the evolution characteristics and trends of food consumption patterns:In general,the food consumption patterns of Chinese residents are still dominated by plant and grain consumption,but the food consumption structure is continuously optimized to the direction of nutritional balance and food diversification;According to the analysis of the evolution trend of food consumption of Chinese residents,the food consumption pattern of Chinese residents is in the process of continuous adjustment and optimization,and the variety of food consumption is diversified.(2)In terms of food consumption environmental pressure:1 Chinese residents’food consumption began to appear ecological deficit in 2008,and the per capita ecological deficit value in 2013 was 0.0705ghm~2;in the land resource types of food consumption,the pressure of cultivated land ecological environment gradually increased;the impact of ecological footprint The evolutionary trend is evolved from rationally loadable to irrational overload.2 If the current situation develops,the carbon footprint of China’s food consumption will increase year by year,the gap between carbon footprint and carbon carrying capacity will become smaller and smaller,and the carbon pressure of food consumption will increase year by year.3 The consumption of water for food production is far greater than the capacity provided by water resources.(3)In terms of the construction of sustainable food consumption mode,through the adjustment design of food consumption mode,the degree of similarity between the adjusted food consumption mode and the current mode is 95.83%,and the amount of plant food accounts for more than 70%of the total,which reflects the traditional food consumption mode with plant food as the main food and animal food as the supplement.The adjusted food consumption pattern is more sustainable in terms of environmental impact from the perspective of consumption habits and nutritional requirements.In terms of resources and environment,the ecological footprint and carbon footprint carrying surplus were realized,and the water footprint carrying degree was increased by 37.7 percentage points.The ecological footprint of cultivated land,forest land,grassland and water area was reduced by 9.5%,16.1%,6.4%and 55%,respectively.The results show that the design and adjustment of sustainable food consumption pattern not only show that the change of food consumption structure is the main driving force of the change of food ecological impact,but also show that the change of food consumption pattern is the most effective way to solve the contradiction of the pressure of food consumption resources and environment.
