| Objective : The aims of this research are to investigate transformation of edible fungi on the natural small molecule ingredients in the culture medium and further evaluate the nutritional value of edible fungi.Method:1.Mycelium is obtained by separating and purifying the fruiting body tissue of edible fungi;2.The transformation of small drug molecules with edible fungi mycelium was completed by liquid fermentation;3.The transformation of small molecular components of Epimedium plants was completed through the mushroom cultivation;4.In this paper the industrial dregs and waste materials including shell of Cyclobalanopsis blakei,residue of Rosa roxbunghii,Epimediu acuminatum(dregs),Salvia miltiorrhiza(dregs),E.acuminatum(dregs)with residue of R.roxbunghii were used as different substrates for cultivation of Pleurotus ostreatus.The contents of crude polysaccharide were determined with Phenol-Sulphate Acid method and the radical scavenging capacity of hydroxyl free radicals and DPPH free radicals with spectrophotometry.Results:1.The experiments separated and purified 6 kinds of edible fungi,namely,Pleurotus ostreatus,Cordyceps Militaris,Agrocybe cylindracea,Winter Sun,Dried Mushroom and Ganoderma;2.By submerged fermentation of Pleurotus ostreatus makes a conversion for epimedoside A into baohuoside-II and the fermented product of Rutin and quercitrin is being determined;3.Mushroom cultivation can significantly reduce the content of total flavone in Epimedium matrix;4.The highest yield(9.49%)and content(60.47%)of crude polysaccharide in P.ostreatus with E.acuminatum(dregs)as substrate were observed and also the strongest antioxidant activity of crude polysaccharide of P.ostreatus from E.acuminatum(dregs)with residue of R.roxbunghii was cleared.When the concentration of polysaccharide in P.ostreatus is 10mg/mL,scavenging rate of polysaccharide on ·OH radical is 89.43% and on DPPH radical is 95.8%.Conclusion:In liquid culture and solid culture,fungi has the role of transformation.The antioxidant activity of the fruit body of edible fungus which were cultivated by Rosa roxbunghii and Epimedium was significantly enhanced.This research has a certain value. |
