As an important cornerstone and component of Harbin city formation and urban characteristics,Sociology of Russian food has high research value.This article focuses on sociology of food in Harbin,focusing on the influence of Russian culture on Harbin food,so that it can be separated from the entire regional research in Northeast China or Heilongjiang,showing a clearer track of the sociology of food evolutions.The research methods used in this article are mainly literature research methods.Through sorting out the past literature,outline the evolutions of sociology of food in Harbin.At the same time,supplemented by interviews,through interviews with relevant personnel,further supplement the research materials,making this article more current.This article first sorted out the sociology of food in Heilongjiang before the Russian culture was implanted,and sorted it out from the aspects of the aborigines and the food culture after "Crashing into Guandong";secondly,introduced the background of the Russian culture implantation,including the construction of the Middle East Railway,the "October Revolution" Immigration,Soviet aid,etc.have brought a large number of Russian immigration and long-term cultural implantation to Harbin;then it focuses on the impact of Russian culture on Harbin's diet,which is also the focus of this article.This chapter discusses the fusion process of the sociogy of Harbin and Russian food,in detail from the aspects of traditional sociogy of Russian food,Harbin's acceptance and transformation of food,and the creation of local food festivals and customs;finally,the author discusses the value of the fusion of the sociogy of Harbin and Russian food.The study found that before the implantation of Russian culture in Harbin,the sociogy of food was part of the entire Heilongjiang region and had no unique characteristics.After the implantation of Russian culture,as Harbin formed an independent modern city,it also established a unique fusion culture of Chinese and Western food.This process has gone through the process of spreading from Russian food to daily ingredients and cooking methods,from the upper middle class to the lower middle class.The influence of Russian culture on the sociogy of food in Harbin is mainly reflected in the following aspects: First,Russian special food and cooking methods;Second,special food and related eating customs;Third,the impact on the decoration of the eating space;Fourth,the influence of the food-related architecture and language(especially dialect).Chinese-Russian cultural exchanges mainly focus on the influence of Russian culture on Harbin sociogy of food,but at the same time,Harbin culture also has an influence on Russian culture.In short,it is precisely because of the comprehensive influence of Russian culture on sociogy of food in Harbin that sociogy of food in Harbin presents a complete and prominent Russian style and becomes a unique city card.This influence deepened the cultural exchange between Russia and China and made an important contribution to the enrichment of the Chinese sociogy of food.At the same time,it has also become a part of Harbin's urban characteristics and continues to promote the development of its tourism industry.
