The risk assessment is formulated by the World Trade Organization(WTO)and the Codex Alimentarius Commission(CAC).It is the basis for the government to formulate relevant food safety laws,standards and policies and plays an important role in risk analysis.Yangzhou salted goose has reached 1500 processing sites,and has continuously penetrated into the surrounding areas and various regions of the country.The annual production capacity has reached more than 20 million,and the average daily consumption has also reached about 20,000.The pollution of salted goose in aquaculture,processing,transportation,sales and many other aspects will affect the final quality of salted goose products and their food safety.Therefore,food safety risk assessment of salted goose is necessary.In order to understand the safety situation of salted goose,we provide reference data for the establishment of the food safety risk analysis system for Yangzhou salted goose.This article conducts random inspection and safety evaluation of salted goose at a small stall in Yangzhou CitySamples come from Guangling,Qujiang,and Jiangdu.Baoying,Yizheng,and Gaoyou,carried out risk assessments for heavy metals,nitrites,and microbes in the samples,and detected and analyzed other sulfa drugs and other hazards,and comprehensively evaluated the safety status of salted goose.During the process of processing and storage,key points are controlled to provide scientific basis for the supervision of relevant departments and to provide early warning for consumers.1.The investigation on diet of salted goose in Yangzhou cityA total of 728 effective questionnaires were collected,consumer consumption frequency of two or three times a month,most consumers at about 0.2kg per intake.Most consumers buy saltwater geese from roadside stalls,and a small number of consumers have experienced physical discomfort after eating salted goose.According to the principle of maximum protection,consumers are divided into high(3 times a week),medium(2 times a week),low(I time a week)three frequency group,the average intake of 0.18kg.The survey results showed that some consumers had experienced symptoms of physical discomfort and it was necessary to conduct food safety risk assessments on salted goose.2.Detection and risk assessment of the microbial contamination of Yangzhou salted gooseThe results of microbiological contamination testing of 70 batches of commercially available bulk retail saltwater goose showed that the qualified rate of total colonies was 70%,the qualified rate of coliform bacteria was 11.43%,There were 4 batches of Staphylococcus aureus,the qualified rate was 94.29%,The remaining pathogens were not detected,and there is a small probability of pathogenic bacteria contaminating Salted goose.The main reason is the product contamination caused by exposure to air sales and irregular sales practices.The Hygienic safety of Yangzhou salted goose is high,and consumers are less likely to infect pathogenic bacteria through edible it,but the hygienic conditions of salted goose should be highly valued.3.Detection and risk assessment of heavy metal pollution in Yangzhou salted gooseThe results of heavy metal contamination testing of 56 batches of commercial bulk saltwater gooses showed that the content of Pb and Cd in the sample is not exceeding the standard.The exceeding standard rate of Hg is 46%,the exceeding standard rate of Cr is 20%.and the exceeding standard rate of As is 4%.For the most dangerous customers,the exposure value of the Hg is 30.9%of PTWI.The exposure value of Hg in the low and middle frequency intake is 5.4%and 2.7%of the PTWI.The exposure value of Cr in the high and middle frequency intake is over the PTWI.The exposure value of Cr in the low frequency intake is 61%of the PTWI.For the most dangerous customers the As is 2.7%of PTMI.The exposure value of As in the middle frequency intake is 1.8%of the PTWI.The exposure value of As in the low frequency intake is 0.9%of the PTWI.Proper intake of salted goose is safe.A large and high frequency intake of salted goose has a risk of Hg and Cr poisoning.4.Pollution status and risk assessment of nitrite and sulfonamides of Yangzhou salted gooseThe results of a total of 70 batches of commercially available bulk retail Brine goose nitrite and sulfonamide fifteen-in-one contamination tests showed that nitrite exceeded the standard rate of 7.14%,the total number of sulfonamide is 0%,the high dosage group in the 9,500-point weekly nitrite exposure value of 0.0011297 mg/kg · bw,only the daily allowable intake of 1.8%.The exposure of nitrite in the consumption population of high dosage group is low,the risk of nitrite poisoning is less and the safety is higher.
