College canteen is characterized by immediate processing and immediate consumption as well as the diners are concentrate.So it is important to establish effective management and control system,ensuring the college cafeteria food security and safety and to provide an assured and comfortable environment for teachers and students.This paper takes Heihe University canteen as the research object,to investigate the situation and the status of the university canteen management.We will to carry on,Hazard analysis was carried out and critical control points were set to formulate the university canteen HACCP quality control system,so that the food hygiene management level could be improved according to the research results.And our goal is to provide assured dining environment for college teachers and students.(1)We selected 100 undergraduates from different grades and majors were selected to as our investigate their real ideas about the canteen environment and the food safety of Heihe university.From the questionnaire survey,it was clear that the students knew relative knowledge about food safety but not deepy enough,and they didn't have high satisfaction to the existing environment and food safety of Heihe College,total satisfaction was less than 50%.(2)In the use of physical and chemical lab of Department of Heihe University,Microbial inspection were made on dining environment,food processing environment and part of raw material of Heihe College Canteen by means of rapid detection.Focus on the detection results,the Food Safety Hazard Analysis Sheet of Heihe College was made out(3)According to the significant hazard analysis of the canteen,to work out the Critical Control Point was of Heihe College Canteen,and to carry on the effective monitor to it.According to the application of analysis and control of food hygiene hazards of University canteens,we aim to make sure the college canteen have a big improvement in health management,in procurement of raw materials processing,and in the level of food safety knowledge of the workers in canteen.The total number of bacterial colony fell by an average of 44.9%...
